Easy Peanut Sauce – Simple Dinner Recipe

according to instagram, you all just can’t get enough peanut butter…. everywhere i turn there is some drool-worthy peanut butter drizzle falling down a smoothie, cookie, protein bar or hey, straight off the spoon. which is why i’m introducing you to the most bombbbb easy peanut sauce.

oh yes – i went there.

easy peanut sauce recipei honesty don’t know how this sauce wasn’t on the blog sooner? i’m not the biggest panera fan, as mentioned in my last post. i’d much rather support a local soup/sandwich spotĀ like Farm to Ladle, but i am a sucker for their thai chicken salad. it’s so simple, but it gets me every time!

they’ve recently downsized their portions though — so really not as much #teampanera as i was before. but, i digress..

whenever i get asked my favorite food, my answer is always “anything with thai peanut sauce” because it’s seriously the greatest invention. it’s basically an excuse to add peanut butter to an even wider array of foods. as you can see by my many peanut butter recipes (peanut butter espresso cups, peanut butter chewy-o’s, banana pumpkin smoothie bowl), i’m quite a fan of this concept.

peanut butter on salad? sure why not! peanut butter and chicken? okkkay! you get the point…

i kept this easy peanut sauce recipe super simple by topping it on some shredded cabbage, shaved brussels sprouts, kale, shredded carrots, broccoli slaw and radicchio. i also tossed some teriyaki marinated chicken in the mix for a protein-kick. plus, who doesn’t love chicken teriyaki!?easy peanut sauce recipe next time i make this sauce i will definitely be pairing it with my healthy honey garlic crock-pot chicken — such a dream combo! i loved tossing my roasted veggies with this healthy and easy peanut sauce.

some more ideas:
    1. thin the sauce out with some chicken stock to make a soup or noodle base,
    2. use it for dipping some spring rolls or sushi in
    3. drizzle it over some honey garlic chicken
    4. spread a thick layer on your favorite tortillas to make a wrap — been hearing a lot about these tortillas lately

there is so much versatility with thai peanut sauce. all you gotta do is store it in your fridge and pull it out as necessary (aka every day). this recipe can be made gluten-free by swapping out your soy sauce for liquid aminos — as show below!

  • 1/4 cup smooth peanut butter
  • 1 tbsp soy sauce
  • 2 tbsp honey
  • 1/2 juice from lime
  • 1/2 tsp Crushed Red Pepper Flakes
  • 1/2 tsp Minced Garlic
  • 1 tbsp hot water

  • 1/4 cup smooth peanut butter
  • 1 tbsp soy sauce
  • 2 tbsp honey

Instructions
  1. whisk all ingredients together except the hot water
  2. add in 1 tbsp very hot water a little at a time until pourable.
  3. taste and adjust seasonings as needed.
