This healthy comfort food is easy to make on the stove or in your crockpot. It really couldn’t be easier to make or more delicious!

This healthy white chicken chili recipe is free of cream or butter but is packed with flavor and the beans create a rich broth that is to die for. Topping it off with Greek yogurt also adds a delicious creamy texture.

What healthy toppings are best with white chicken chili?

Topping off your slow cooker white chicken chili with plain greek yogurt (instead of sour cream), avocado, nutritional yeast, and some salsa or hot sauce gives this chili an extra kick but also ups the cream factor while keeping it 100% healthy. Try adding some pepper jack, a little mozzarella, or even goat cheese to this healthy one-pot white chicken chili!

This healthy slow cooker white chicken chili has endless possibilities. It’s the perfect recipe to host a party and set out all sorts of toppings to build your own bowl.

What ingredients are in white chicken chili?

Chicken Breast — I used all-white-meat for this chili recipe, but feel free to use chicken thighs if you’d like! 

Onion — Fresh diced onion is always a must in soups. If you have time, try browning them in a little olive oil before you get cooking! It really adds so much flavor to the recipe! If you’re a wimp like me when it comes to cutting onions, check out this onion chopper I found!

Canned Green Chiles — If you don’t have any canned green chiles on hand, try substituting roasted poblano peppers. 

Chicken Broth — If you don’t have chicken broth on hand, you can swap it for vegetable broth as well. You can substitute bouillon cubes or granules in this recipe. The recommended equivalent measure is to dissolve 1 bouillon cube (or 1 teaspoon of bouillon granules) in 8 ounces of boiling water for every 1 cup of broth.

Cannellini Beans — Cannellini beans add depth to the broth and extra protein! I love the creaminess they bring to this recipe. If you aren’t a fan of cannellini beans, feel free to swap them for your favorite bean instead! Red kidney beans, chickpeas, or great northern beans would work instead of cannellini beans.

Other ingredients: Canned tomatoes, lime, cumin, minced garlic, Italian seasoning, crushed red pepper flakes, and ground red pepper.

How to make Spicy White Chicken Chili:

If you like your chili extra spicy, try adding extra crushed red pepper flakes, fresh jalapenos, and a drizzle of hot sauce or sriracha!

If you want to make this recipe less spicy, omit the red pepper flakes and ground red pepper.

Ingredients
  

  • 1.5 lbs Chicken
  • 1 Large Sweet Onion
  • 8 oz Canned Green Chilis
  • 1 tbsp Minced Garlic
  • 32 oz Chicken Broth
  • 2 cans Cannellini Beans
  • 1 Lime Juiced
  • 1 tbsp Cumin
  • 1 tsp Italian Seasoning
  • 1 can Diced Tomatoes
  • 1/2 tsp Crushed Red Pepper Flakes
  • 1/2 tsp Ground Red Pepper

Instructions
 

  • Trim the fat and skin off your chicken breasts and place into your crock pot.
  • Dice your onion and add it on top of the chicken.
  • set aside one cup of cannellini beans for later.
  • Add in remaining ingredients, adding the chicken broth last.
  • Place lid on top and cook for 4-6 hours on high or 7-8 hours on low.
  • When the chili is almost done, remove the chicken and shred it on a cutting board. Take the one cup of cannellini beans you set aside, and blend with a little bit of the broth from your crock-pot. This creates a thicker chicken stock to add back into the crock pot.
  • Place the chicken and sauce mixture back into your crock pot, stir and finish cooking.
  • Taste your chili and add salt or seasonings to preference.

Notes

Suggested toppings: plain greek yogurt, nutritional yeast, avocado, salsa, hot sauce, pepper jack cheese.

  1. It is very good, but is there anything we can do about the taste of the lime rind? I used a whole lime, as instructed, and can taste the flavor of the rind. Any advice would be appreciated!
