This year Michael and I are in charge of a sweet potato dish for Thanksgiving at his parent’s house. When he delivered this news to me, he also showed up with 10 JUMBO sweet potatoes for the 12 people that will be there. Little did he know I already had a big bag from Trader Joe’s lying around.
If you’re anything like me and this sweet potato conundrum… you have SO many leftovers after Thanksgiving (cooked or uncooked) you literally have no idea what to do with them all! On one-hand you’re grateful, but on the other you’re so tired of eating leftover turkey sandwiches that you’re about to just throw everything away.
Not only because that’s wasteful 😉 but also because there are tons of fun things you can do with the leftovers besides reheating a replica of what you had on thanksgiving day!
Now that our apartment has turned into a sweet potato farm, I’ve been frantically trying to use up as many potatoes as possible before they go bad… which was how this simple recipe was born!

This sweet potato recipe is incredibly simple for a lot of reasons, but the main reason is because of the avocado mash from Good Foods that I use. Their avocado mash saves me SO much time and I love how fresh it stays. Avocados tend to go bad before I get to finishing them, but this avocado mash stays perfect in the refrigerator.
Seriously a life saver!

Not only is the avocado mash great for this recipe, but it’s perfect for on-the-go lunches and portion control. Anyone else have awful portion control when it comes to avocado?

1 Sweet Potato
2 Packets Avocado Mash
2 Tbsp Feta
2 Tbsp Pomegranate Seeds
