  1. Prepare your sweet potatoes by either baking them or microwaving them. If baking, preheat your oven to 425F. Pierce your sweet potatoes 4-5 times and bake in the oven for 45-50 minutes. If microwaving, pierce your sweet potatoes 4-5 times and microwave on a microwave-safe plate for 10 minutes, flipping halfway through.
  2. Remove skin from sweet potatoes.
  3. Add sweet potato, cheese, and eggs to a food processor and mix until evenly combined. Season with salt as desired.
  4. Preheat your waffle iron. Once heated, spray with cooking oil and pour waffle batter onto your iron. I used a mashed potato scoop to scoop the batter onto the iron and make sure the waffles were similar in size.
  5. Remove the waffles from the iron and place them on a cooling rack. This will keep them from getting soggy.
  6. Serve immediately with your favorite toppings, dips, or sides.
  7. Store your waffles in a Ziploc bag, making sure all air is removed, in the freezer for future use.
