With the holidays quickly approaching I thought it was time to break out the gingerbread recipes!

To be honest, I had no idea how much I loved gingerbread until I made these muffins last week.
The only time I had encountered gingerbread was building gingerbread houses from a box. AKA super stale, cardboard “cookie” cutouts that were in no way bringing justice to the delicious flavor.
These Vegan and Gluten-Free Gingerbread Muffins were first on my list because muffins are my personal favorite treat, and it appears you all love them just as much!

I hadn’t heard of blender muffins before joining Instagram, but once they caught my eye I knew I had to create a blender muffin recipe of my own.
The fact you can add all of your ingredients to one kitchen gadget and you’re done?
Don’t forget about how easy the clean up for these vegan and gluten-free gingerbread muffins are either.
I let my blender soak in warm, soapy water while my muffins are baking and then clean out the blender while the muffins cool. This makes the process seamless. 🙂
You can also make these vegan and gluten-free gingerbread muffins in a food processor if you don’t own a blender.
The steps and outcome are the exact same.
I also added a simple vanilla glaze to my muffins for a little extra something! This step is optional, but I love how pretty the vanilla glaze makes the muffins look.
It’s always fun to make pretty food when you’re hosting or gifting a baked good. Don’t you think?
You could also dust these healthy gingerbread muffins with powdered sugar if you’re not a fan of icing.
I love how the powdered sugar imitates a dusting of snow. It really brings it all together!
For these Healthy Vegan and Gluten-Free Gingerbread Muffins you will need:
- Oats (Not oat flour)
- Cashew Butter
- Coconut Sugar
- Molasses (I used blackstrap)
- Almond Milk (I used vanilla)
- Maple Syrup
- Baking Powder
- Baking Soda
- Vanilla Extract
You will also need a blender or food processor (I used my Ninja for this recipe), a muffin tin, muffin liners (I love these silicon non-stick liners!), a cooling rack, and a large plastic bag for drizzling the vanilla glaze.
According to this website, you can sub almond flour for oat flour. HOWEVER, in my recipe, I used whole oats and not oat flour. I have only made the recipe as listed above, but you could potentially swap the oats for 2 1/4 cup almond flour.
