Although I took a instagram hiatus, I did not take a baking hiatus.

Not. Even. Close.

I can’t wait to share all the fun recipes I developed over the holidays, as well as things I reflected on and experienced. I take writing my captions very seriously. Sometimes the food is a just a way to capture someone’s attention and bring them to my words.

OK- onto the healthy cinnamon apple banana bread!
oh and did I mention it’s dairy free, too?

I felt kinda bad that my last apple banana bread recipe wasn’t 100% homemade, so I was determined to make one from scratch this time around!

Dairy Free Cinnamon Apple Banana Bread

But since there’s nothing quite like some warm, cozy apple banana bread, this recipe needed to have its moment.

The only thing that might make this apple banana bread better is a THICK spread of almond butter and some coffee.

NOTE: I have only made the apple banana bread using the recipe below. If you’re vegan, you can try using flax eggs in place of the eggs. Other than that, you’re good to go!

Dairy Free Cinnamon Apple Banana Bread

FOR THE APPLE BANANA BREAD:

  • 1 cup whole wheat flour (this is my favorite one to bake with!)
  • 1 cup all purpose flour
  • 1 tsp. of each: baking soda, baking powder, vanilla extract
  • 1/4 tsp salt
  • 1/2 cup apple sauce
  • 2/3 cup mashed banana
  • 1/4 cup honey
  • 1/4 cup pure maple syrup
  • 1/2 cup melted coconut oil
  • 2 eggs, room temperature

MIDDLE LAYER + TOPPING:

  • 1 cup chopped apples
  • 1/2 cup coconut sugar
  • 3 tbsp. melted coconut oil
  • 2 tsp cinnamon

HOW TO: preheat oven to 350F. In a small bowl, combine whole wheat + all-purpose flour, baking powder, baking soda + salt. In a large bowl, add apple sauce, banana, honey, maple syrup, oil, and vanilla. Stir to combine, then whisk in two eggs. Fold dry ingredients into wet, stirring until completely combined. Pour half of batter into greased bread loaf pan. In a small bowl, mix apple, coconut sugar, oil, cinnamon + apple. Sprinkle half of the mixture on first half batter + pour remaining half of batter on top. Sprinkle remaining apple cinnamon sugar mixture on top + bake for 40ish minutes.

    Is it ok to not use whole wheat flour? Can I use all white flour or another kind?

      Of course! You can also use 1/2 whole wheat and 1/2 all purpose 🙂 What type of flour were you thinking of using? Coconut flour is super absorbent so I would research how to adjust the recipe if that’s what you’re using! You will need a lot more liquid.
