Healthy Peanut Butter Snack Cake

    1. Preheat your oven to 350F and line an 8×8 baking pan with parchment paper.
    2. Prepare your oat flour if needed. Measure out 1 1/4 cup flour and set aside.
    3. Add wet ingredients to your bowl and mix until combined.
    4. Add dry ingredients to the mixture and combine. Do not overmix. Fold in chocolate chips or any other things you like such as nuts or dried fruit.
    5. Pour in the prepared baking pan and bake for 20 minutes.
    6. Insert a toothpick to make sure the snack cake is cooked through. Allow the cake to bake longer if needed. Remove and allow to cool before cutting and serving.
    7. For best results, store in the fridge instead of the counter and warm up a slice as needed!
