If you couldn’t tell from the number of times I’ve shared my Gluten-Free Crunchy Peanut Butter Balls on Instagram, I’m definitely a fan of using PB2 in my bliss balls.
Turns out PB2 can act as somewhat of a flour replacement in these no-bake recipes and the more excuses I have to add peanut butter flavor to my recipes, the better!
If you’re unfamiliar with PB2, it’s powdered peanut butter made with roasted peanuts that are pressed to remove most of the natural oils. The result is a powdered peanut product that is packed with flavor but contains 90% less fat and 70% fewer calories than traditional peanut butter!
I used PB2 for the base of my dough for this recipe to keep it low-fat for a change. These cookie dough balls make for a great pre-workout treat since they are a great source of easy to digest carbs and protein.
They’re also great for after a tough workout since they are lower in fat. Fat slows your digestion which makes it harder to absorb the protein you need to refuel your muscles!

PB2 Chocolate Chip Cookie Dough Balls are ready in just 5 easy steps!
- In a medium mixing bowl, whisk the peanut butter powder, powdered sugar, and salt together. Add the water and stir until well incorporated. The batter will be very stiff.
- Fold in chocolate chips.
- Use a cookie scoop to measure out 1 tablespoon portions and place them on a baking sheet lined with waxed paper. Place the balls into the freezer for 30 minutes.
- Remove the chocolate chip cookie dough balls from the freezer and roll them into smooth balls with your hands.
- Keep refrigerated until ready to serve.
