Apple Walnut Crisp - Gluten-free, Vegan

Ingredients
  

Filling

  • 4 Cups apples, peeled and chopped
  • 2 Tablespoons Coconut Sugar
  • 1 Tablespoon maple syrup
  • 1 Tablespoon Walnut "flour" blend walnuts in your blender until flour like texture forms
  • 2 Teaspoons Cinnamon
  • 1/4 Teaspoon Nutmeg
  • 1/2 Teaspoon Pure Vanilla Extract

Topping

  • 2/3 Cup Walnuts, Diced
  • 1/2 Cup gluten-free rolled oats
  • 1/4 Cup Oat Flour Blend oats in blender to make your own
  • 1/2 Teaspoon Cinnamon
  • 2 Tablespoons pure maple syrup

Instructions
 

  • Preheat oven to 350F and great an 8x8 pan with coconut oil. Set aside.
  • In a large bowl add all of your filling ingredients listed above. Stir until apples are completely and evenly coated and sugar has dissolved.
  • Pour your apple filling into the 8x8 pan and smooth out the top into an even layer.
  • Add all of the ingredients for the topping into a medium bowl and mix until crumbles form.
  • Spoon your filling mixture on top of the apple mixture. Make sure the topping is evenly dispersed.
  • Bake for 45-55 minutes. Once the top is a deep golden brown and the juice begins to thicken, your crisp is done.
  • Feel free to spoon out a corner piece to check on your crisp. If the juices are still watery, continue baking for 5 more minutes.
  • Serve warm over your favorite ice cream, yogurt, or in a bowl on its own!
  • Transfer to an airtight container and store in the fridge for up to one week. Reheat before serving.
