Preheat oven to 350F and great an 8x8 pan with coconut oil. Set aside.
In a large bowl add all of your filling ingredients listed above. Stir until apples are completely and evenly coated and sugar has dissolved.
Pour your apple filling into the 8x8 pan and smooth out the top into an even layer.
Add all of the ingredients for the topping into a medium bowl and mix until crumbles form.
Spoon your filling mixture on top of the apple mixture. Make sure the topping is evenly dispersed.
Bake for 45-55 minutes. Once the top is a deep golden brown and the juice begins to thicken, your crisp is done.
Feel free to spoon out a corner piece to check on your crisp. If the juices are still watery, continue baking for 5 more minutes.
Serve warm over your favorite ice cream, yogurt, or in a bowl on its own!
Transfer to an airtight container and store in the fridge for up to one week. Reheat before serving.
