Blueberry Protein Muffins

Blueberry Protein Muffins are delicious, filling, and the best way to get your day started! They are great for on-the-go breakfast and snacks, and if you have little ones they will love them too!

Ingredients
  

  • 1 1/4 cup oat flour PACKED set aside 1 tbsp for coating blueberries
  • 3/4 cup pureed banana
  • 6 oz plain greek yogurt
  • 1/3 cup maple syrup or honey
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup packed vanilla flavored protein powder
  • 1 tsp Baking powder
  • 1 tsp baking soda
  • ½ cup blueberries

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit and place liners in your muffin pan. Spray with cooking spray.
  • Measure your flour and set aside 1 tbsp for coating the blueberries.
  • Mash your bananas in a large mixing bowl.
  • To the mashed bananas, add your greek yogurt, maple syrup, eggs, and vanilla extract. Mix until smooth.
  • To your bowl, add remaining ingredients except blueberries and 1 tbsp flour.
  • Toss your blueberries in 1 tbsp flour. This prevents them from sinking in your muffins. Fold in the blueberries, saving some to sprinkle on top.
  • Evenly distribute batter in your muffin pan.
  • Bake for ~20 minutes.
  • Allow to cool and enjoy!
