Dairy Free Chocolate Chip Cookies

Enjoy these extra large bakery style dairy free chocolate chip cookies as your new favorite dessert!

Ingredients
  

  • 1/4 cup coconut oil room temperature
  • 1/2 cup unsalted vegan butter room temperature
  • 2/3 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 tsp baking soda
  • ¼ cup applesauce
  • 1 egg
  • 1 1/2 tsp vanilla
  • 2 1/2 cups all purpose flour spooned and leveled
  • 2 tsp cornstarch
  • ½ tsp salt
  • 1 ¼ cup dairy free chocolate chips (divided - save some to sprinkle on top)
  • Optional: Sea salt for sprinkling on top

Instructions
 

  • Preheat the oven to 375 degrees.
  • In a large mixing bowl beat vegan butter and coconut oil on medium for 30 seconds.
  • Add granulated sugar, brown sugar, and baking soda. Beat until combined.
  • Beat in egg, applesauce, and vanilla.
  • Slowly mix in flour, cornstarch, and salt until all combined.
  • Stir in 1 cup chocolate chips, saving the rest to sprinkle on top.
  • Place in the fridge to chill for 2 hours or overnight.
  • Spoon ~2 tbsp dough onto a parchment paper lined baking sheet. Press a few chocolate chips on top of each cookie to make sure there is chocolate in every bite!
  • Bake for 10-12 minutes or until edges have browned slightly.
  • Place cookies on a wire rack to cool.
  • Store in an airtight container.
