Ingredients

  • 1 3/4 cup Super fine almond flour NOT almond meal as your blondies will turn out dry
  • 1/4 tsp salt
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ¼ cup peanut butter - very important it’s natural peanut butter with no sugar added. This can cause your blondies to turn out dry if you use anything else.
  • 2 TBS coconut oil melted and cooled
  • 1/2 cup maple syrup
  • 2 tsp vanilla extract
  • ¼ cup almond milk
  • ½ cup mini chocolate chips chunks or chopped chocolate

Instructions

  • Preheat your oven to 350 degrees F. Grease and line a 9x5" loaf pan, set aside.
  • Combine all ingredients except chocolate chips into a mixing bowl and mix until combined. I used a hand mixer. If the batter is dry, add 2 more TBSP almond milk.
  • Fold in chocolate chips and place batter into the prepared loaf pan.
  • Sprinkle with more chocolate chips as desired.
  • Bake in the preheated oven for 10-15 minutes or until slightly golden brown on top.
  • Cool and serve!
  • Store in an airtight container for up to a week or freeze for up to 2 months.
