Healthy Oatmeal Chocolate Chip Protein Pancakes

Ingredients
  

  • 1 3/4 Cups Oat Flour (ground up oats)
  • 1 Cup Unsweetened Vanilla Almond Milk
  • 3/4 Cup Plain Greek Yogurt
  • 1/4 Cup Protein Powder I used Bob's Red Mill unflavored pea protein
  • 2 Egg Whites
  • 2 Tbsp maple syrup
  • 2 Tsp Baking Powder
  • 1 Tsp Cinnamon
  • 1 Tsp Vanilla Extract
  • 1/2 Tsp Salt
  • 1/3 Cup Dark Chocolate Chips (Enjoy Life Brand for dairy-free option)
  • Coconut Oil *Optiona, l used Le Cruesets non-stick cookware instead of oil

Instructions
 

  • In a large bowl combine oat flour, protein powder, baking powder, sea salt and cinnamon.
  • In a separate bowl combine greek yogurt, almond milk, egg whites, vanilla extract and 2 Tbsp pure maple syrup.
  • Add wet ingredients to dry and stir to combine.
  • Stir in chocolate chips. If batter is too thick add in a bit more almond milk.
  • Add a 1/3 cup of batter to form pancakes.
  • Cook until all bubbles have popped (about 3 mins) & flip over for 1 min. Repeat until all batter is used.

Healthy oatmeal chocolate chip pancakes are the perfect morning treat or weekend brunch recipe. These pancakes are gluten-free, refined sugar-free, high in protein and most importantly delicious. Enjoy the cinnamon flavor with a drizzle of maple syrup and a cup of coffee!
