  • Preheat oven to 350 degrees Fahrenheit.
  • Add the oat flour, pumpkin, greek yogurt, eggs, protein powder, pumpkin pie spice, cinnamon, baking powder, and baking soda to a large mixing bowl and stir with a hand mixer or wooden spoon until combined. Stir in the chocolate chips, saving some to sprinkle on top.
  • Distribute into 12 greased muffin liners.
  • Bake for 25-30 minutes or until a toothpick comes out clean.
  • Enjoy!

Notes

You can use a 1:1 ratio for cottage cheese in place of greek yogurt. I recommend using 4% cottage cheese and blending it until smooth. Use 3/4 cup blended in place of 3/4 cup greek yogurt.
