Creamy Gluten Free Tomato Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1/2 cup diced sweet onion
  • 2 cloves garlic chopped
  • 28 fl. oz can diced tomatoes no salt added
  • 15 oz can white beans drained
  • 1 1/2 cups gluten-free vegetable stock
  • 2 teaspoons salt less if your diced tomatoes contain salt
  • 1 teaspoon dried oregano
  • 1/2 cup full fat coconut milk
  • 1/2 teaspoon ground black pepper

Instructions
 

  • In a large pot over medium heat, saute the onion and garlic in the oil until tender, about 5 minutes.
  • Add the remaining ingredients and bring to a boil. Reduce heat and simmer for ~20 minutes, or until vegetables are tender.
  • Working in batches, transfer the soup to a blender and puree until smooth, or use an immersion blender to puree the mixture until smooth. If the soup is too thick, add more vegetable stock until desired consistency.
  • Serve with gluten-free croutons, gluten free grilled cheese, or a side salad.
