Creamy Gluten Free Tomato Soup

I realize that warmer weather is ahead, but there’s nothing like a good bowl of tomato soup! Even though it’s really easy to make you may be wondering why you wouldn’t just buy a can, because it can be pretty inexpensive at the store. 

Canned and condensed soups are full of preservatives and hidden ingredients that are absolutely not necessary. With an easy soup like tomato, there’s no reason to not make it at home.

You know exactly what’s going in, it uses pantry staples (so you probably already have all of the ingredients), and you can freeze it for later. So make it once, then eat it again and again. 

Let’s not forget, if you have your own garden you definitely swap the canned tomatoes for freshly picked, which makes it even better! 

Ingredients for Creamy Gluten Free Tomato Soup 

  • olive oil
  • sweet onion
  • garlic
  • diced tomatoes
  • white beans
  • vegetable stock – double check that the broth is gluten free
  • salt – you may want to cut back on the salt if your canned tomatoes have salt added.
  • dried oregano
  • full fat coconut milk
  • ground black pepper

How to Make Homemade Healthy Tomato Soup

Saute the onion and garlic (in oil) in a large stock pot over medium heat for about 5 minutes.

Pour in the tomatoes, white beans, spices, veggie stock, and coconut milk. 

Bring the soup mixture to a boil, then simmer over low heat for 20 to 30 minutes or until the veggies are tender.

Transfer the soup in batches to a blender and puree until it’s smooth and creamy.

What to Serve with Gluten Free Tomato Soup

With croutons: There are several gluten free brands where you can get store bought croutons. You can also make your own by chopping up gluten free bread and roasting it in the oven. Homemade croutons are best when you make them from stale bread, but you can still use the oven if you don’t have old bread.

Gluten Free Grilled Cheese: Just use gluten free bread and your favorite cheese. Just a reminder, that any white cheese is better than orange in terms of being overly processed. 

Salad: A simple salad goes great with tomato soup and is a good idea if you wanted to make a light lunch out of it.

Tips for Making

  • If you find that the soup is thicker than you would like, thin it out with additional veggie broth. 
  • Want a thicker soup? Add more coconut milk.
  • Depending on the size of your blenders, you may have to puree several different times. You could also use an immersion blender directly in the pot to reduce cleanup and omit using the blender completely. 
  • Pour the soup back in the stock pot while you are blending to keep it warm until you are ready to serve.

Can You Freeze Tomato Soup? 

Yes! Once it has cooled completely, transfer it into a freezer safe container or bag where it will stay fresh for several months. 

We like storing soups like this for single servings, just to make it easier if you want to take it for lunch. 

You can also freeze tomato soup in soupers, which is a silicone storing tray.

  • 1 tablespoon olive oil
  • 1/2 cup diced sweet onion

  • 28 fl. oz can diced tomatoes no salt added
  • 15 oz can white beans drained
  • 1 1/2 cups gluten-free vegetable stock
  • 2 teaspoons salt less if your diced tomatoes contain salt
  • 1 teaspoon dried oregano
  • 1/2 cup full fat coconut milk
  • 1/2 teaspoon ground black pepper

Instructions
 

  • In a large pot over medium heat, saute the onion and garlic in the oil until tender, about 5 minutes.
  • Add the remaining ingredients and bring to a boil. Reduce heat and simmer for ~20 minutes, or until vegetables are tender.
  • Working in batches, transfer the soup to a blender and puree until smooth, or use an immersion blender to puree the mixture until smooth. If the soup is too thick, add more vegetable stock until desired consistency.
  • Serve with gluten-free croutons, gluten free grilled cheese, or a side salad.
