Gluten Free Chicken Parm is a healthy comfort food that is full of traditional flavors and makes a delicious and filling 30 minute meal!

Whether you are ditching the takeout or just want to switch your menu up, Gluten Free Chicken Parm is the way to go! This is a classic Italian dish minus the gluten and only uses whole ingredients. 

It’s super easy to even double or triple if you are planning to feed a crowd. One of my favorite things about this easy healthy recipe is that it uses ingredients that you probably already have on hand, aka pantry staples!

What You Need for Gluten Free Chicken Parmesan 

chicken breasts – slice in half to use as cutlets

olive oil

gluten free breadcrumbs – if you are a Trader Joe’s shopper they have some that are delicious! 

grated Parmesan

cornstarch

garlic powder

Italian seasoning

salt

pepper

freshly grated mozzarella

Marinara – by all means you can use store-bought, BUT you may not want to pass on my 6 Ingredient Marinara with No Added Sugar! 

Chopped fresh basil – we are just using this for garnish, so if you don’t have it, no worries!

How to Make Chicken Parm the Gluten Free Version 

Grab a baking sheet and grease it with a little bit of olive oil and preheat the oven to 425. 

Mix together the gluten free breadcrumbs, grated parm, seasonings, and cornstarch in a medium mixing bowl.

Using the remaining olive oil, drizzle it over the chicken breasts and toss to coat. 

Add each piece of chicken to the breading mixture and cover evenly on both sides. 

Place the breaded chicken on the baking sheet and bake for 20 minutes, flipping halfway through. Depending on the size of your chicken you may need to cook it a little longer. Just be sure the internal temperature is 165 degrees.

Then move the chicken to the upper rack and change the oven setting to broiler.  

Move the cutlets to the middle of the pan if needed so that it is touching. Cover in marinara and sprinkle with mozzarella. 

Broil just until the cheese begins to turn brown and is melted. 

Garnish with basil leaves if desired and serve!

If you don’t want to serve the chicken parm over pasta, you can use zoodles, vegetables, or even add it to a salad!

Ingredients
  

  • 2 chicken breasts cut in half for chicken cutlets
  • 4 tsp olive oil divided
  • 1/3 cup gluten free breadcrumbs
  • 1/3 cup grated Parmesan
  • 2 tsp cornstarch
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • ⅛ teaspoon pepper
  • 1 cup freshly grated mozzarella
  • 1 cup marinara
  • Chopped fresh basil for garnish

Instructions
 

  • Preheat the oven to 425°F. On a baking sheet, spread 2 tsp olive oil to grease your pan. Set aside.
  • In a medium bowl mix together, gluten free breadcrumbs, grated parmesan, cornstarch, garlic powder, Italian seasoning, salt, and pepper. Mix together the breading with a fork.
  • Drizzle remaining 2 tsp olive over chicken breast cutlets and toss to evenly coat chicken with oil. Place a chicken cutlet, one at a time, in the breading mixture. Press down slightly and use the fork to flip over and coat other side. Transfer breaded chicken to the greased baking sheet and repeat with remaining chicken.
  • Bake for 10 minutes, flip chicken, and then continue cooking for 5-10 minutes more, or until internal temperature reaches 165°F. Remove from oven, move oven rack to upper position, and preheat broiler.
  • Move baked chicken together so it is all in the middle of the pan. Sprinkle grated cheese over top.
  • Broil for 2 minutes, or until the cheese is melted and starts to brown. Top with marinara sauce and garnish with fresh basil. Serve with your favorite gluten free pasta, vegetables, or salad!
