Crockpot Fiesta Chicken
Fiesta Crockpot Chicken only requires 5 ingredients, great for weeknight meals, and is perfect for meal prepping through the week!
Many people put their slow cookers away once we start creeping into the warmer months. Not around our house! Especially with getting ready to be a new mom, I am looking for the easiest dinners possible!
If you do decide to pack away an appliance and you have an Instant Pot, don’t forget that it has a slow cooker function as well!
This is also a great recipe to double for crowds and parties and even carry to pot lucks! Bonus points that it is also a high protein recipe!

How To Make Fiesta Crockpot Chicken
First, grab the ingredients below.
Chicken – we used boneless skinless breasts. Chicken breast is high in protein and something we always have on hand.
Cream cheese – If you are dairy free, grab your favorite dairy free cream cheese. I like kite hill or Miyokos.
Salsa – for extra spice use a hotter salsa and for more texture, use chunky salsa.
Frozen corn – you can use canned corn as well, but I prefer frozen.
Black beans – a staple in tex mex recipes but also adds protein and fiber!
Taco Seasoning Packet – you can also make your own, but I’m all for easy!
How to make Healthy Fiesta Crockpot Chicken:
Simply add all of the ingredients to your crockpot and cook on high for 4 hours or low for 6! How simple is that? Almost kind of silly to even include instructions, right?
Once it has finished cooking, take the chicken out and shred then add it back to the crockpot.
Head to the bottom of this post to see some tips on how to shred your chicken like a pro in less than 3 minutes!
Can You Use Frozen Chicken?
Yes, you can, but you may want to increase the cooking time. Also, be sure to check the internal temperature before serving.
The worry that surrounds cooking frozen chicken in the crockpot is because it cooks so slow, you don’t want the temperature to hang around the “danger” zone too long, or when bacteria starts to grow
Ways To Serve Crockpot Fiesta Chicken:
One reason I love this dump-and-go recipe is that it is so versatile! Here are some ideas on ways to serve and side dishes to serve with, even though it is a great high protein one-pot meal!
- Over rice or cauliflower rice
- As a dip with chips or veggies
- In a burrito
- In a lettuce wrap
- Over a salad
- As a taco
How To Store Fiesta Chicken:
If you decide that you want to use this easy chicken recipe for meal prepping you can store it in the fridge for up to 4 days!
To freeze, just let it cool completely and add it to a freezer-friendly bag or container.
If you store it flat in the freezer it saves a ton of space, which is nice! Also, be sure to store it in portions as it makes reheating super convenient!
Grab my favorite meal containers here! These glass dishes are microwave and oven safe! Even though they are breakable, we don’t have to worry about plastic leaching into our food and constantly replacing containers.

This is definitely going on my meal plan this week! What about you?

Can I make fiesta chicken in the instant pot?
Yes! Add all of your ingredients except the cream cheese to the instant pot. Cook on high for 13 minutes and allow the instant pot to release pressure naturally.
Once it has finished cooking, use a hand mixer to shred the chicken directly in your instant pot (be careful not to let the hot juices burn you!) OR take the chicken out and shred it with two forks and add the chicken back to the crockpot.
Stir in cream cheese and combine until evenly distributed and creamy. Serve immediately.
What is fiesta chicken?
Fiesta chicken is similar to “crack” chicken but with a spicy twist!
Is fiesta chicken healthy?
This version is healthy becuase we are using half the typical amount of cream cheese. The remaining ingredients are high protein, high fiber and whole foods!
Can I make dairy free fiesta chicken?
This recipe contains cream cheese, but you can certainly use your favorite dairy free cream cheese in place of it.
I recommend making a double batch of this healthy fiesta chicken for meal prep! You won’t regret it!

So you use a hand mixer in the crockpot, with all of the other ingredients? Doesn’t that make it mushy??
You use a hand mixer for the chicken and then add the rest! You can see it in this video: https://www.instagram.com/p/CSZU4cPg61P/
Do you need to drain the black beans?
I do! See how to make it here: https://www.instagram.com/p/CSZU4cPg61P/
Can you use boneless chicken thighs?
I don’t see why not!
How many servings is in this?
4-6!
Just made this recipe and it is delicious! I used a dairy-free cream cheese and swapped corn with chickpeas (dietary reasons) and it’s so yummy! Makes a delicious lettuce wrap!
