Crockpot Fiesta Chicken

Fiesta Crockpot Chicken only requires 5 ingredients, great for weeknight meals, packed with Mexican flavors, and is perfect for meal prepping through the week!

Many people put their slow cookers away once we start creeping into the warmer months. Not around our house! Especially with getting ready to be a new mom, I am looking for the easiest dinners possible! 

If you do decide to pack away an appliance and you have an Instant Pot, don’t forget that it has a slow cooker function as well! 

This is also a great recipe to double for crowds and parties and even carry to pot lucks! Bonus points that it is also a high protein recipe!

I promise it will be a new family favorite, especially when you see that clean up is simple and there are so many ways to eat it.

Ingredients Needed

Chicken – we used boneless skinless chicken breasts. Chicken breast is high in protein and something we always have on hand.

Cream cheese – If you are dairy free, grab your favorite dairy free cream cheese. I like kite hill or Miyokos.

Salsa – for extra spice use a hotter salsa and for more texture, use chunky salsa. You could also use Rotel (diced tomatoes with green chilis)

Frozen corn – you can use canned whole kernel corn as well, but I prefer frozen.

Black beans – a staple in tex mex recipes but also adds protein and fiber! You could probably swap or add pinto beans too if you wanted. 

Taco Seasoning Packet – you can also make your homemade taco seasoning blend, but I’m all for easy!

How to Make the Slow Cooker Fiesta Chicken Recipe

Simply add all of the ingredients to your crockpot and cook on high for 4 hours or low for 6! 

Once it has finished cooking, take the chicken out and shred then place the shredded chicken back in the slow cooker.

​Serve with your favorite toppings for side dish.

Can You Use Frozen Chicken?

Yes, you can, but you may want to increase the cooking time. Also, be sure to check the internal temperature with a meat thermometer before serving.

The worry that surrounds cooking frozen chicken in the crockpot is because it cooks so slow and stays at room temperature, you don’t want the temperature to hang around the “danger” zone too long, or when bacteria starts to grow

Ways To Serve Crockpot Fiesta Chicken:

One reason I love this fiesta chicken casserole is that it is so versatile and many different ways to make it! Here are some ideas on ways to serve and side dishes to serve with, even though it is a great high protein one-pot meal! 

  • Over white rice, instant brown rice, or cauliflower rice bowls
  • As a dip with tortilla chips, corn chips, or veggies 
  • In a burrito or make burrito bowls
  • In a lettuce wrap 
  • Over a salad
  • As a taco in flour tortillas or corn tortillas
  • next to Mexican rice
  • Use as a nacho topping

Other toppings: feel free to add sour cream, pico de gallo, and/or cheddar cheese.

How To Store

If you decide that you want to use this easy chicken recipe for meal prepping you can store it in the fridge for up to 4 days! 

To freeze, just let it cool completely and add it to a freezer-friendly bag or container.

If you store it flat in the freezer it saves a ton of space, which is nice! Also, be sure to store it in portions as it makes reheating super convenient!

  • 1.5 lbs chicken
  • 4 oz cream cheese
  • 8 oz salsa
  • 1 cup frozen corn
  • 1 can black beans
  • 1 packet taco seasoning

Instructions

    Just made this recipe and it is delicious! I used a dairy-free cream cheese and swapped corn with chickpeas (dietary reasons) and it’s so yummy! Makes a delicious lettuce wrap!
