5 Ingredient Crockpot Chicken Fajitas that are gluten-free, Whole30 approved, keto, and paleo. This whole30 crock pot recipe is loaded with fresh vegetables, flavor, and is perfect for meal prep! Add this healthy fajita chicken to tacos, bowls, or salads for an easy weeknight dinner.

For these 5 Ingredient Crockpot Chicken Fajitas you will need:
- Chicken
- Taco Seasoning
- Crushed Tomatoes (I used canned)
- Fresh Bell Peppers
- Fresh Onion
I like to use the store-bought packets from Trader Joe’s because I’m all about quick and easy, You are always welcome to make your own taco seasoning at home.
Some other things you will need for these paleo crock pot chicken fajitas:
- A crockpot — I’m obsessed with my Multi-Express Crock. It is an Instant pot and crock pot all in one and also offers a sautee function!
- A cutting board and two forks to shred the chicken
- A sharp knife to slice your peppers
- Glass Tupperware for storing leftovers or if making this recipe for meal prep.

How to make paleo and whole 30 crock pot chicken fajitas:
- Prepare your onions and bell peppers by chopping them into your desired size/shape. I like to cut them fajita style, but any shape will do!
- Pour your tomatoes into a 6-quart slow cooker first, then add the chicken, vegetables, and seasoning on top. Stir to combine. NOTE! If you like your peppers and onions less cooked, add them halfway through cooking instead of at the beginning.
- Cover and cook on high for 4 hours or low for 6, or until the chicken and vegetables are very tender.
- Uncover and remove the chicken. Place the chicken on a cutting board, and shred it with two forks (or cut it into pieces).
- Add the chicken back into your crockpot and stir well. You want to make sure the chicken soaks up all the delicious spices and juices.
- Season with salt and pepper as desired. Serve immediately or add to sealed containers and freeze for later!
How long should you cook chicken breast in a crock pot?
Time will vary based on the size and cut of your chicken.
For this recipe, we are using skinless, boneless chicken breast.
They will cook on high for 4 hours or low for 6 hours.
How to make your own taco seasoning at home:
- 1 tablespoon chili powder
- 2 teaspoons garlic powder
- 1 teaspoon of each: ground cumin, oregano, paprika
- 1/2 teaspoon onion powder
- 1/4 teaspoon of each: crushed red pepper flakes, salt, pepper
Modify this taco seasoning recipe however you like based on your spice level preference.
I tend to get a little heavy-handed with the oregano, onion powder, and garlic powder.

I truly believe there are no rules when it comes to food, but some of the classic foods to serve with chicken fajitas are:

Can you freeze shredded chicken?
Yes! Once your shredded chicken fajitas are completely cooled, you can put it in ziplock bags or airtight containers in 1 or 2 cup portions (depending on how much you think you’ll use at a time), and store them in the freezer.
If stored properly, the shredded chicken will maintain good quality for about 4 months.

Should I cut chicken for fajitas before cooking?
It’s best to cut the chicken into thin strips for skillet fajitas, but for these slow cooker fajitas, you don’t need to cut it first!
What sauces go with fajitas?
I love this healthy avocado cream sauce on top of my crockpot fajitas!
Salsa Verde, chipotle sauce, garlic lime sauce, or hot sauce are all great with fajitas.

So yummy. Left over sauce will be perfect for a Tortilla soup base!!
Been wanting to try this recipe for awhile. We really enjoyed it. Inexpensive, delicious, good flavor and easy. I paired the chicken/veggie mixture with rice, beans, lettuce, avo, cilantro etc. turned it into a bowl. Leftovers too! The one thing we discovered was that the veggies don’t look like they do in the picture. They were very soft, cooked and squishy. If you’re wanting more firm veggies, like I was expecting, id toss them in halfway through cooking. Not in the beginning like the recipe says. That’d be the only thing I’d try differently next time. Enjoy!
