If you’re looking for a delicious recipe that is sure to impress but also comes together in roughly 30 minutes, look no further!

I am seriously overjoyed to be sharing these Whole30 approved stuffed bell peppers with you all today.

They’re filling, tasty, healthy, grain free, and not to mention, gorgeous!

These stuffed peppers are great for hosting a crowd or preparing for meal prep at the beginning of the week.

Can you have rice or quinoa on whole30?

No. Whole30 means you are following a grain free, dairy free, and paleo diet free from added sugars.

This means no rice, quinoa, wheat, rye, or sprouted grains.

For this reason, we are using cauliflower rice in this stuffed pepper recipe!

Can you freeze stuffed peppers?

Yes! If you’re looking to prepare them ahead of time, you can definitely do so.

They retain their flavor and texture well in addition to holding their shape.

Personally, I like making these stuffed peppers at the beginning of the week as part of my meal prep menu.

They’re surprisingly delicious when eaten cold.

I like to add my Vegan Avocado Cream Sauce or fresh avocado to sneak in some healthy fats and make the meal complete.

Do I need to cook my meat before filling my stuffed peppers?

For this particular recipe, I chose to cook the turkey filling on a skillet beforehand and stuff the peppers with the cooked filling.

I wanted to make sure the turkey absorbed all the tomato juice and seasonings before adding them to the peppers.

There are some recipes that use uncooked meat and it works just fine; however, you will need to increase your cook time in order to make sure the raw meat is cooked through.

Ingredients needed for these Whole30 Stuffed Peppers:

  • Bell peppers
  • Ground turkey – I like 93% lean so it’s nice and juicy
  • Canned, diced tomatoes – Use fire roasted for a fun switch up!
  • Mushrooms (I used canned and drained them)
  • Cauliflower rice
  • Minced garlic – you can swap for garlic powder
  • Chili powder
  • Cumin
  • Pepper
  • Salt

I also added my Whole30 Avocado Cream Sauce and micro greens on top for a garnish and to pack in some extra nutrients.

I grow my own microgreens at home!

They require almost zero sunlight, so they’re great to grow if you live in an apartment.

What should I serve with my bell peppers?

I served my stuffed bell peppers with my favorite dairy-free avocado cream sauce and it was a match made in heaven!

This sauce is also Whole30 approved.

Make this recipe your own by:

  • Swapping out the turkey for ground beef or chicken
  • Adding sauteed spinach
  • Adding black beans
  • If you’re not following Whole30, feel free to top with cheese, sour cream, or stuff with cooked rice

This recipe feels like a meal on its own to me, but you could serve them with a salad, starch, or roasted vegetables.

And of course, no meal is complete without dessert!

How to store and reheat stuffed bell peppers

  • Refrigerate peppers in an airtight storage container for up to 4 days.
  • Rewarm leftovers in a baking dish in the oven at 350 degrees F.

Ingredients
  

  • 4 Bell Peppers
  • 1 Lb Ground Turkey
  • 2 Cans Mushrooms, Drained
  • 1 Cup Cauliflower Rice *Can sub regular rice if not following Whole 30
  • 14 Oz Diced Tomatoes, Canned
  • 1 Tsp Ground Pepper
  • 1 Tsp Chili Powder
  • 2 Tsp Cumin
  • 1 Tsp Minced Garlic
  • 1/4 Tsp Salt

Instructions
 

  • Preheat your oven to 375F.
  • Cut your peppers in half (lengthwise) and remove the stems and seeds.
  • Sautee your garlic in a skillet on the stove for a minute. Add your ground turkey and break up the meat as it cooks.
  • Once your turkey is close to completely cooked, add tomatoes, mushrooms, and cauliflower rice.
  • Stir in seasonings and remove from heat.
  • Spray a 9×12 pyrex with olive oil spray and place your empty peppers into the dish. Spoon the filling mixture into the pepper halves.
  • Bake in the oven for 30 minutes.
  • Drizzle with whole 30 avocado cream sauce (linked in the post) and enjoy!

    Switch out the meat for cooked brown lentils! No difference in taste but a lot less animal cruelty. Climate change? Food emissions are super low for plant-based meals so lets think about our kids future too.

    These were absolutely delicious and so easy! I added about a half a cup of diced yellow onion with the garlic before cooking the turkey, and I used brown rice instead of cauliflower for my husband’s because he’s not doing Whole30. I also topped his with some shredded cheddar cheese. And that creamy avocado sauce was SO good!!

    My husband said this was the best stuffed pepper recipe ever! The cauliflower rice was lighter than normal rice. I also used jar mushroom and roasted peppers that gave it a little sweeter taste. Definitely a recipe to remember!
