As you know I absolutely love a good sheet pan dinner. Everything from salmon for two to Hawaiian chicken. I am constantly looking for new ways to use fewer dishes while still making healthy dinners.

If you haven’t experimented with chicken sausage yet, I highly suggest it! It’s a leaner alternative to pork and beef sausage and you can use it for both breakfast and dinner.

Tips for Making

  • Be sure the pan is not crowding. You may need to bake in batches. If it’s too full, your dinner will end up steam versus roasted.
  • If you are meal prepping, get the dicing and chopping out of the way and bag it up for when you want to cook it.
  • Need something else to go with it? Serve with regular white or brown rice, pasta, zoodles, or cauliflower rice as a lower carb option.
  • Swap the veggies out to try something new!
  • You can also use beef sausage if desired.
  • Use fresh green beans if possible. If you were to use can or frozen they would be too soggy.

  • If you are using chicken sausage that is not precooked, you will probably want to brown it first before adding it to the sheet pan.
  • Cheese it up by adding parmesan before serving.
  • Make variations of this dinner based on the vegetables that are in season for the freshest dinner ever!
