Healthy Sheet Pan Chicken Sausage and Veggies
This Sheet Pan Chicken Sausage and Veggies Dinner is a one-pan meal that’s ready in less than one hour! Packed with protein and nutrition. Also great for meal prepping and naturally gluten free!
As you know I absolutely love a good sheet pan dinner. Everything from salmon for two to Hawaiian chicken. I am constantly looking for new ways to use fewer dishes while still making healthy dinners.
If you haven’t experimented with chicken sausage yet, I highly suggest it! It’s a leaner alternative to pork and beef sausage and you can use it for both breakfast and dinner.
This healthy chicken sausage recipe is great for busy nights, easy lunches (great leftovers), a way to use up veggies before they spoil if you have a ton left.

Chicken Sausage Sheet Pan Dinner Ingredients
Chicken Sausage – try to look for a more natural brand that is free of nitrates and other unnecessary ingredients
Veggies: Sweet potatoes, green beans, onion
Spices: garlic salt, pepper, Italian seasoning, parsley
Garlic: Mince your own cloves or use the store-bought kind in the jar.
Oil: Use an olive or avocado oil.
How to Make One Pan Chicken Sausage and Vegetables
Line a large baking sheet with aluminum foil and preheat the oven to 400 degrees.
Slice the chicken sausage so they are in one-inch rounds.
Dice the potatoes and onion, then trim the green beans.
Spead out the sausage and veggies so they are in a single layer on the baking sheet.
In a small bowl, whisk together the oil, minced garlic, and spices. Pour it over the sausage and veggies. Use a spatula to coat them evenly.
Bake for 20 minutes, then stir with a spatula. Continue cooking for another 10 to 20 minutes.
Garnish with fresh parsley and serve.
Tips for Making
- Be sure the pan is not crowding. You may need to bake in batches. If it’s too full, your dinner will end up steam versus roasted.
- If you are meal prepping, get the dicing and chopping out of the way and bag it up for when you want to cook it.
- Need something else to go with it? Serve with regular white or brown rice, pasta, zoodles, or cauliflower rice as a lower carb option.
- Swap the veggies out to try something new!
- You can also use beef sausage if desired.
- Use fresh green beans if possible. If you were to use can or frozen they would be too soggy.
- If you are using chicken sausage that is not precooked, you will probably want to brown it first before adding it to the sheet pan.
- Cheese it up by adding parmesan before serving.

Healthy Sheet Pan Chicken Sausage and Veggies
Ingredients
- 12 oz Chicken Sausage sliced into coins
- 3 cups sweet potato diced into 1/2” cubes
- 2 cups green beans trimmed and chopped
- 1 onion chopped
- 3 tbsp olive oil
- 1 tbsp garlic minced
- 1 tbsp italian seasoning
- ½ teaspoon garlic salt
- ½ teaspoon black pepper
- 2 tbsp chopped fresh parsley optional
Instructions
- Preheat your oven to 400F. Line a large baking sheet with foil for easy clean up.
- Slice the sausage into 1” rounds, chop your onion, dice the sweet potatoes into 1/2” cubes, and trim your green beans.
- Spread the sausage and veggies out onto a prepared sheet pan.
- Whisk together olive oil, garlic, and seasonings in a bowl. Pour over sausage and veggies and toss to coat.
- Bake for 20 minutes, toss with a spatula, and bake another 10-20 minutes.
- Sprinkle with fresh parsley and serve!
