Lemon Pepper Chicken and Potatoes Sheet Pan Meal | Healthy Dinner Idea

Lemon Pepper Chicken and Potatoes is an easy and healthy weeknight meal for the whole family. Chicken, potatoes and broccoli are tossed in a light and flavorful honey lemon pepper sauce that’s both sweet and tangy. Ready in roughly 30 minutes with easy clean up.

Easy and Healthy One Pan Lemon Pepper Chicken and Potatoes

If you can’t tell from my recent posts (honey garlic chicken sheet pan dinner and citrus and herb shrimp sheet pan dinner), I’m on quite the one pan dinner kick!

Sheet pan meals are an easy way to get creative with ingredients you already have on hand.

Most sheet pan meals are composed of a protein and veggie combination, but it’s the sauce that really sets them apart.

I was blown away by this lemon pepper chicken dinner because of the light, tangy and flavorful sauce.

It’s simply composed of lemon, honey, mustard, garlic, salt, and olive oil.

Does it get any easier?

Easy and Healthy Lemon Pepper Chicken and Potatoes Sheet Pan Meal

The broccoli was the perfect pair because it soaked up all the lemony goodness.

The potatoes also got super crispy which was a great contrast to the rest of the meal.

The potatoes also provide your healthy carbohydrate for the meal, so you really have dinner in one pan!

Typically I’ll make a sheet pan dinner and still serve it with rice or a starch, but this one is literally ready once you pull it out of the oven!

I’m not the best at meal prepping (as I’ve stated in this post) but if one day I have my life together enough, you will most definitely catch me meal prepping this lemon pepper chicken dinner.

Followed by something sweet of course 🙂

Healthy Lemon Pepper Chicken and Potatoes Sheet Pan Meal

For this Lemon Pepper Chicken and Veggies Sheet Pan Meal you will need:

  • Chicken
  • Broccoli
  • Baby Potatoes
  • Lemon Juice
  • Stone Ground Mustard
  • Garlic
  • Honey
  • Olive Oil
  • Lemon Pepper Seasoning
  • S + P

You will also need:

  • A baking pan
  • Parchment Paper
  • A small mixing bowl
  • Cutting Board
  • Sharp Knife
  • Spatula for tossing

I’ve been serving this lemon pepper chicken and veggie dinner in a bowl (because everything is better in a bowl) and topping it with tzatziki sauce. It always hits the spot!

My favorite right now is one I found at Trader Joes. Shocking, I know — HA.

One Pan Lemon Pepper Chicken, Broccoli and Potatoes

Lemon Pepper Chicken and Potatoes Sheet Pan Meal | Healthy Dinner Idea

Ingredients
  

  • 1 1/2 lb Chicken Breasts Boneless, Skinless diced into 1.5x1.5 inch cubes
  • 3 1/2 Cups Broccolli
  • 1 lb Baby Potatoes
  • 3 Tbsp Lemon Juice
  • 1 Tbsp Course Ground or Stone Ground Mustard
  • 1 Tsp garlic Minced
  • 1 Tsp honey
  • 3 Tbsp olive oil Divided
  • 1 Tbsp Lemon Pepper Seasoning
  • 1/4 Tsp Salt
  • Pepper To taste

Instructions
 

  • Preheat the oven to 400°F and place parchment paper on baking sheet. In a small bowl, whisk together 1.5 tbsp lemon juice, mustard, garlic, honey, ¼ teaspoon salt, and 2 tablespoons of the olive oil. Set aside.
  • Place the potatoes and broccoli on the pan. Drizzle with the remaining olive oil and about half of the lemon-mustard mixture. Toss to coat. Season generously with salt, pepper and ½ tbsp lemon pepper seasoning. Spread evenly on the pan.
  • Cut your chicken breasts into roughly 1.5x1.5 inch cubes. Season each your chicken with lemon pepper seasoning and place on the pan also. Drizzle the remaining lemon/mustard mixture over your cubed chicken.
  • Bake for 25 minutes, tossing halfway through. Cook until the potatoes are tender and the chicken is cooked through. Drizzle with the remaining lemon juice. Serve immediately.
