Vegan Apple Cake with Caramel Drizzle (Healthy)
This decadent Vegan Apple Cake is made with fresh apples and topped with a sweet caramel drizzle that brings all of the flavors together! This healthy apple cake is a must-make for fall!
While I bake all the time, the official baking season will be here before we know it! You know fall and the holidays! This is what inspired me to make this apple cake. There’s just something about the season change that gets me wanting to bake more and add apples to everything!

It was just time for me to make a cake and I really wanted to make it vegan-friendly and healthy because let’s face it, it’s hard to find delicious recipes that turn out perfect that are also vegan and use whole ingredients!
Ingredients for Vegan Apple Cake
Flour – I am using a mix of all-purpose and whole wheat flour
Sugar – You can use coconut sugar or brown sugar, but today I am using coconut
Almond milk – Using non-dairy milk keeps this recipe vegan, I prefer unsweetened vanilla almond milk. Please don’t use sweetened vanilla, unless the recipe calls for it, it’s overpowering and adds a flavor that is not intended.
Oil – To keep it healthy, use coconut oil but make sure you melt it. You can also use vegan butter as well or regular butter. Be sure to melt these as well.
Nuts – I prefer walnuts or pecans but almonds sound pretty good, too!
Apples – I’m choosing Granny Smith because they are the perfect combo of sweet and tart! Plus they work really well for baking.
Other ingredients: baking soda, baking powder, maple syrup, vanilla extract, caramel sauce, and cinnamon
Can I use a different kind of apple instead of Granny Smith?
Yes, you can! You just want to be sure to use a variety that is good for baking so they do not get mushy. Washington Apples has a great resource when trying to find the best apples along with a sweetness scale and other tips!
How Can I Tell When My Cake is Done?
When you start to see the edges pull away from the pan, chances are it’s getting close. To be sure, just stick a toothpick in the middle, if it comes out clean it’s ready!
Tips For Making
- As always, do not over mix your batter!
- Lining your pan with parchment paper ensures your cake will never stick!
- Before adding in the apples, if you toss them in a little flour this makes them not sink to the bottom.
How To Store
Store your cake in the refrigerator to keep it fresher. Also, don’t cut all of the slices at one time, only what you are serving.
This keeps the moisture in and it will not dry out as quickly.

Vegan Apple Cake with Caramel Drizzle
Ingredients
- 1 cup all purpose flour
- 3/4 cup Stone Ground Whole Wheat Flour
- 3/4 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 tsp Cinnamon heaping scoop
- 1 cup Coconut Sugar or brown sugar
- 1/2 cup Unsweetened Vanilla Almond Milk
- 1/4 cup maple syrup
- 1/4 cup Coconut Oil melted
- 3/4 tsp Vanilla Extract
- 1 cup Apples chopped, I used Granny Smith
- 1/4 cup Walnuts or Pecans
- 1/4 cup caramel sauce
Vegan Caramel Sauce
- 1 Cup Coconut Cream
- 3/4 Cup Brown Sugar
- 1 Tbsp Cornstarch
Instructions
- Preheat the oven to 350 degrees F. Grease or line an 8x8 pan with parchment paper.
- In a large bowl, sift together flours, baking powder, baking soda, and cinnamon.
- In a medium bowl, add the coconut sugar, milk, maple syrup, coconut oil, and vanilla extract. Whisk until combined.
- Pour the wet ingredients into the bowl with the dry ingredients and mix until just combined.
- Toss the chopped apple in a little bit of flour (this prevents them from sinking to the bottom of the blondies) and fold into batter.
- Pour the batter into the pan and sprinkle optional nut pieces on top.
- Bake in the oven for 30-35 minutes, or until a toothpick inserted comes out clean. Cool before slicing and serving.
- Drizzle with salted caramel sauce.
Vegan Caramel Sauce
- Add coconut cream, brown sugar and cornstarch to a small pot over medium-high heat.
- Stir constantly while the coconut cream melts. The mixture will get bubbly.
- Lower the heat to a simmer and stir frequently for about 5 minutes.
- Remove from heat and allow to sit a few minutes to thicken.
- Store leftover caramel in a covered glass container in the refrigerator for about a week.
