Healthy slow cooker chicken is a staple in our house. I’m not always the best at meal prepping, but this is one of those recipes I will take the time (aka 10 minutes) to meal prep!
Michael and I are both busy people, so having the bulk of our meal ready to go in the fridge is such a life-saver. I love making it plain so I can add seasonings, sauces and sides for whatever mood I’m in!
If we’re craving asian, we’ll throw the chicken in a teriyaki marinade, add some sautéed veggies and pair it with a side of rice + peanut sauce for an easy stir fry.![]()
If we’re craving pizza, I’ll pop a frozen pizza in the oven, add some diced peppers, tomatoes + mushrooms, and add the chicken with 10 mins to go on the timer for a healthy pizza.
We also love adding it to pesto pasta, creamy lentil pasta, bbq chicken sandwiches, tacos or alongside one of our favorite meals from Luvo. We are huge fans of their cauliflower mac and cheese! The options really are endless.
What you will need for this healthy slow cooker chicken:
Salt
Pepper
Chicken Broth
EBTB (everything but the bagel seasoning from Trader Joes)
Garlic Powder
.. and chicken of course 🙂
You can also add any other seasonings you love. Sometimes I’ll toss in some cumin or crushed red pepper flakes, too!

For this particular night, we decided to pair our easy slow cooker chicken with some Chana Masala from Luvo. This flavorful vegan dish is made up of chickpeas, lentils, brown long grain rice and veggies.

Healthy Slow Cooker Chicken Breast | Easy Shredded Chicken Recipe
Ingredients
- 6 lbs Chicken Breast
- 2 tsp Salt
- 2 tsp Black Pepper
- 2 tsp Garlic Powder
- 1/3 Cup Chicken Broth
- 2 tsp Everything But The Bagel Seasoning You can find this at trader joes
Instructions
- Place chicken breasts in slow cooker, and sprinkle with seasonings and liquid. Cover and cook on low for 8 hours, or until the chicken shreds easily with a fork. (*If making a smaller batch, keep an eye on your slow cooker as the chicken will likely need less cooking time.)
- Remove the chicken with tongs, and shred using two forks or the paddle attachment of a stand mixer. Use immediately, or place chicken in a covered container in the fridge to use throughout the week!
