Y’all have heard me say it over and over again, but I absolutely LOVE frozen food.

Michael and I are always working late and running around like crazy people, so we’ve loved finding new foods and brands to try that offer frozen meals.
Some of our favorite go-to frozen foods consist of: frozen fruits, veggies, black bean burgers, turkey burgers, smoothies, chicken curries and cauli rice.
A lot of people think since I’m a food blogger, all we do is sit around and eat glamorous meals… WRONG.
When you cook all day for work, you really don’t feel like cooking when it comes dinner time!
ENTER: LUVO MEALS & THIS CREAMY FIVE MINUTE CAULIFLOWER MAC + CHEESE
Since you all know i’m SUPER into modifying recipes (see: 7 Ways to Step Up Your Banana Bread, How to Eat Healthy at Any Restaurant, My Top Nutrition Tips blog post, + recipes like this, this + this) this meal was no different. I took this five minute cauliflower mac and cheese from Luvo and simply threw in a little extra love to doctor it up… and trick michael into thinking I slaved away in the kitchen all day 😉
The result…. the creamiest mac and cheese EVER. Plus it was jam-packed with nutrients so it was definitely a win-win.

& when you add in the spinach, nooch + pepper you get an additional 6 grams of protein, 6 grams of fiber + tons of vitamins!

WHAT YOU’LL NEED:
- Luvo’s Frozen Cauliflower Mac & Cheese
- Spinach
- Red Bell Pepper (You can also add roasted red peppers like these which are SO GOOD)
- Cooking Oil of Choice (I used EVOO)
- Coconut Milk
- Nutritional Yeast – (Read about all of the Benefits of Nutritional Yeast)
- EBTB Seasoning Optional
andddd that’s it!

- Skillet
- Microwave
literally who doesn’t have a skillet and a microwave..? HA.
I was so impressed with how the mac and cheese came out before adding anything that I seriously debated spending time sauteeing the veggies. If you have some roasted bell peppers, those would be super delicious to add, too!
Maybe it’s just me, but I feel so much better when I can spot some veggies in my meal. So I went for it.

- 1 Box Luvo's Cauliflower Mac & Cheese
- 1 Cup Spinach
- 1/2 Red Bell Pepper
- 2 Tbsp Coconut Milk
- 1 Tbsp Nutritional Yeast
- 1/2 Tbsp EVOO
Ingredients

- Cook your Luvo's meal as directed on back of box.
- While your meal is in the microwave, slice your bell pepper into the size you'd like in your meal.
- Heat up the EVOO in your skillet and sautee your bell peppers + spinach.
- Take your Luvo meal out of the microwave and add coconut milk + nutritional yeast stir until at the consistency you want. You may need to add more coconut milk.
- Add veggies to your bowl and season with EBTB if you'd like!
