Seriously… I could eat breakfast for every meal of the day. In fact, I pretty much do.
Eggs are such a staple in our house – they’re inexpensive (as talked about in my 15 Clever Ways to Eat Healthy on a Budget post), packed with protein and easy to digest.
When I first wake up, I like to start my day off with something sweet (like apple cinnamon oatmeal with peanut butter), BUT give me an hour after I wake up and I want ALL the savory foods… as seen on my instagram!
I pretty much live off of toast, eggs, avocado, nutritional yeast (read about the Benefits of Nutritional Yeast here) a
little LOT of cholula hot sauce andddd pepper!
Michael, however, has a sweet tooth 24/7 and only wants:

Since marriage is about compromise…. I decided we needed a healthy protein pancake recipe to have on hand.
ALSO, since Le Creuset just came out with a new line of non-stick cookware that’s absolutely to die for.. I had to come up with the perfect recipe to use on my new non-stick crepe pan!
Le Creuset’s nonstick collection has a surface that’s free of harmful compounds and will never chip or flake. Sticky ingredients (like these pancakes!!) slide right off which meant there was no need for oil and the cleanup was a BREEZE.

I’ve been LOVING these oatmeal chocolate pancake recipe lately because
- It’s loaded with protein (obviously) which keeps me full throughout the day
- It includes chocolate… ’nuff said
- It uses all clean ingredients so I don’t feel bloated, heavy and gross after indulging!
I used plain greek yogurt to make this a high protein pancake recipe, but if you’re vegan or don’t digest dairy that well, you can always use a coconut yogurt substitute 🙂
I used dark chocolate chips because they’re my favorite (and have antioxidants packed in them!), but you can also use enjoy life chips which are also diary free!
My favorite way to serve these healthy oatmeal chocolate chip pancakes is with a drizzle of natural peanut butter, pure maple syrup and a big ole cup of coffee. It’s also fun to split a Coffee Banana Smoothie with these protein pancakes 🙂
I just LOVE the coffee and chocolate combo (made apparent with my 3-Ingredient Dark Chocolate Espresso Peanut Butter Cups) — anyone else?
These healthy oatmeal chocolate chip pancakes are made complete with:
- Fiber – Oats
- Protein – Greek Yogurt + Egg Whites + Pea Protein
- Fats – Almond Milk, Chocolate Chips + the HEALTHY portion of natural peanut butter we drizzle all over them!
