It’s pretty obvious that I’ve chosen a favorite cooking flavor this fall and it’s not pumpkin (gasp!) However! If you’re looking for some pumpkin recipes, you won’t be disappointed with my Whole Wheat Double Chocolate Pumpkin Bread or Soft-Baked Pumpkin Snickerdoodle Cookies.

Last week I shared these Vegan Cinnamon Apple Blondies, a couple of days ago I shared my Snickerdoodle Muffins made with Applesauce, sauteed cinnamon apples + yogurt toast made an appearance on Instagram, and now I’m coming at ya with these Oatmeal Apple Pie Cookies!

Don’t get me wrong, I’m a HUGE pumpkin fan. These Soft Baked Pumpkin Snickerdoodle Cookies might be my all-time favorite cookie recipe, but apple cinnamon has my heart all year long and I like to come up with recipes that are a little more evergreen. You know? 😉
These healthy Oatmeal Apple Pie Cookies will 100% make an appearance once fall is over.
Pop one in the microwave for 10 seconds and add a dollop of peanut butter and you’re in HEAVEN. That’s something I want to experience every day of the year. Ha!
I made these oatmeal cookies healthy by using oats and whole wheat flour as the base. They also only require two tablespoons of butter and 1/2 cup of maple syrup!

They get some of their sweetness from the fresh apple chunks, which I love. I’m all about choosing natural sugars to sweeten my baked goods when possible!
I used granny smith apples in this recipe because they are firm, slightly sour, and definitely one of the best apples for apple pie. Since these are Apple Pie Cookies afterall, I figured I should use the classic! You could definitely use whatever apple you prefer, though. 🙂
For These Oatmeal Apple Pie Cookies You Will Need:
- Instant Oats
- Whole Wheat Flour
- Baking Powder
- Ground Cinnamon
- An Egg
- Maple Syrup
- Diced Granny Smith Apple

How To Make Oatmeal Apple Pie Cookies:
- Whisk together the oats, flour, cinnamon, baking powder, and salt in a medium bowl.
- In a separate bowl, whisk together the butter, egg, and vanilla extract. Stir in the maple syrup.
- Add in the flour mixture, stirring just until incorporated. Fold in the apple. Chill for at least 45 minutes.
- Preheat the oven to 325°F, and line a baking sheet with parchment paper or a silicone baking mat.
- Using a spoon and spatula, drop the cookie dough into 12-15 rounded scoops onto the prepared sheet.
- Bake at 325°F for 13-17 minutes. Cool on the pan for 10 minutes before turning out onto a wire rack.
