5 Ingredient Chicken and Dumplings (healthier!)

This healthier 5 ingredient crockpot chicken and dumpling recipe is pure comfort food that takes very little effort and is the perfect one pot dinner for the colder months.

With fall weather upon us, my crock pot is working overtime!

I love making chili and chicken enchilada soup, but lately, I wanted something a little more home style.

So chicken and dumplings were the first thing that came to mind! Even better that it’s just 5 ingredients!

5 Ingredients Needed:

  • Boneless skinless chicken breasts – can also use chicken tenders.
  • ranch seasoning mix – adds so much flavor without using a ton of different ingredients.
  • plain Greek yogurt + water – adds a creamy and rich flavor to the base while adding protein and cutting down on fat.
  • chicken broth – use homemade or store bought. 
  • Refrigerated biscuits -I used Flaky Grands 
  • frozen mixed vegetables – these are optional, but I like adding more veggies.

How to Make Healthier 5 Ingredient Crockpot Chicken and Dumplings

Add the chicken to the bottom of the crock pot and cover with the ranch seasoning. 

In a small bowl, whisk the Greek yogurt, water, and chicken broth together and pour over the seasoned chicken. 

Add the frozen vegetables. 

Cover and cook on low for 8-9 hours or high for 4-5 hours. 

Once the chicken is cooked, shred it and stir it back in the slow cooker. 

Tear or cut each biscuit into 8-9 pieces. Place on top of the chicken mixture and stir. 

Place the lid back on and cook for another hour.

Tips for Making 

  • Sour cream can be used in place of the yogurt if desired. 
  • If you would rather dice the chicken, you can instead of shredding it. 
  • Use a pizza cutter to make slicing the biscuits easier. 
  • I do not recommend using chicken thighs for this recipe, as it will change the taste.
  • Make sure the internal temperature of the chicken reaches 165 degrees before serving.  You can check with a digital meat thermometer.
  • Depending on the size of your slow cooker, doubling the recipe may not be best if you are feeding a larger crowd. 
  • Avoid taking the lid on and off while the dumplings and chicken are cooking.

How To Store 

Keep leftover chicken and dumplings in the refrigerator for up to 4 days.

As the soup sits, it will thicken.

Add a splash of water or broth before reheating to thin it out if needed. 

Reheat in the microwave or on the stovetop over low heat.

Ingredients
  

  • 2 lbs skinless chicken breasts
  • 1 tablespoon ranch seasoning mix
  • 1/2 cup plain greek yogurt mixed with 1/4 cup warm water
  • 1 14.5 oz can of chicken broth
  • ½ can Grands flaky refrigerator biscuits
  • Optional: 1 cup frozen mixed vegetables

Instructions
 

  • Place Chicken breasts in crock pot and season with ranch seasoning
  • Add plain yogurt mixed with warm water and chicken broth.
  • Add mixed vegetables if using.
  • Cover and cook on high for 4-5 hours or low 8-9 hours
  • Once cooked, shred the chicken
  • Cut or tear each biscuit into 8-9 pieces.
  • Add biscuit dumplings to the soup and stir.
  • Cover and cook on high for another hour.
  • Serve warm and enjoy!
