Nothing brings back summer memories as a kid quite like the taste of a warm s’mores. Gooey marshmallows, graham cracker crumbs and melted chocolate, there really isn’t anything better.
My mom used to make a no-bake indoor s’mores bar growing up and it was one of my favorite things she made.
I recently partnered with Panera Bread on a campaign for their new s’mores bar. Naturally, it left me wanting to make my own healthy version!

That’s the story of how these oatmeal s’mores cookie bars were born and I’ve never been more thankful for Panera in my life. 😉
Made with rolled oats and whole wheat flour, these s’mores cookie bars are healthier than most recipes but most importantly they taste delicious!

These quick and easy s’mores bars take only 15 minutes to bake and require minimal ingredients. They’re also designed with three irresistible layers in mind.
- The bottom layer is an oatmeal cookie crust.
- The middle layer is where the chocolate and marshmallows hide out.
- And the top layer is an oatmeal graham cracker crumble (with a few more chocolate chips and marshmallows because I couldn’t resist).

For these easy Oatmeal S’mores Cookie Bars you will need:
- Old-Fashioned Oats
- Whole Wheat Flour
- Light Brown Sugar
- Baking Soda
- Butter
- Vanilla Extract
- Chocolate Chips
- Marshmallows
- Graham Crackers
- Salt
You will also need:
- 8×8 Baking Pan
- Oven Mits
- Sharp Knife
- Hand Mixer or Standing Mixer
- Rubber Spatula

Oatmeal S'mores Cookie Bars
Ingredients
Bottom Layer
- 1 Cup Whole Wheat Flour
- 1 Cup Old-fashioned Oats
- 1/2 Cup Light-Brown Sugar Packed
- 1/2 Tsp Baking Soda
- 1/2 Tsp Salt
- 1/2 Cup Butter Softened
- 1 Tsp Vanilla Extract
Middle Layer
- 1 Cup Chocolate Chips
- 1 1/4 Cup Marshmallows
Top Layer
- 6 Tbsp Light-Brown Sugar
- 6 Tbsp Butter Softened
- 3/4 Cup Old-fashioned Oats
- 3/4 Cup Graham Crackers Crushed
- 6 Tbsp all purpose flour
- 1/4 Cup Mini Chocolate Chips
- 1/4 Cup Mini Marshmallows
Instructions
Bottom + Middle Layer
- Preheat the oven to 350 degrees F. Line an 8 x 8 baking pan with parchment paper and set aside.
- In a small bowl, combine all of the ingredients for the base layer. Stir until a crumbly type of dough has been formed. Press this "dough" into the bottom of an 8 x 8 baking pan.
- Cook for 10 minutes or until lightly browned on top and remove from the oven.
- Sprinkle the chocolate chips and marshmallows from the middle layer ingredient list on top to melt.
Top Layer
- Beat together the brown sugar and butter until light and creamy. Stir in the oats, coarsely crushed graham crackers, and flour.
- Scoop the dough over the marshmallow layer. Evenly disperse scoops of dough on top of the marshmallows and spread out dough.
- Return to the oven for about 5 minutes
- Remove from oven and add remaining chocolate chips and marshmallows.
- Place in the oven and broil for 2 minutes or until marshmallows start to brown.
- Remove, cool and enjoy!
Love the recipe. This is like eating a wonderful chocolate oatmeal cookie with marshmallow.
I added 1/4 cup graham cracker to the bottom layer crust and took out a commensurate amount of flour just b/c I love graham cracker.
I also used a tub of Jet Puffed Marshmallow Cream and spread it on the bottom crust for an even distribution and thicker layer. Then I crushed up Hershey’s dark chocolate candy bars and sprinkled that over the marshmallow cream. I feel like the melting and thickness profile is better than chocolate chips. Pretty amazing.
