In the past, it has been taboo to eat cookie dough because of the egg and possible salmonella that comes along with it. You no longer have to worry! My edible gluten-free snickerdoodle cookie dough is eggless and can even be flattened out into a gluten-free no-bake cookie! Best of both worlds, right?

If you love all things snickerdoodle as I do, you have to try some of my other healthy desserts that have that same flavor! 

You can have cookie dough as a snack or a sweet treat after dinner! I will add that these “no-bake” snickerdoodles are like the easiest recipe in the world to make! Want something even sweeter? Add this cookie dough to some guilt-free Halo ice cream, and you have just created your ice cream sundae, you know, similar to a topping bar like Sweet Frog! 

How Is This Cookie Dough Gluten-Free? 

Scratch-made cookies and cookie dough almost always call for flour, and most people reach for either all-purpose white flour or self-rising. My version contains oat flour which is one of the best gluten-free options! Since this is edible cookie dough or no-bake cookies, we don’t need them to rise, so oat flour is the perfect substitution. 

Ingredients for Gluten-Free Snickerdoodle Cookie Dough Balls

Cashew Butter – When shopping for natural nut butter be sure to check the labels to ensure they really are all-natural 

Maple Syrup – Here’s a tip: darker maple syrup has more minerals and antioxidants versus the lighter syrups 

Oat Flour – As mentioned before, this is what makes these cookies gluten-free. If you don’t have any store-bought oat flour, you can make your own! Simply blend gluten-free oats into a powder and you are ready to bake! 

Coconut Sugar and Cinnamon – This will be the mixture you roll your cookies dough in. 

Other ingredients needed: Salt and vanilla extract

We all know that cookie dough is the dough before you actually cook them right? So how do you turn snickerdoodle cookie dough into a no-bake cookie? You simply flatten out the cookie dough balls and then make crisscrosses on top. Ta-da! There you have your no-bake snickerdoodle cookie! 

Tips for Making Cookie Dough 

  • To make the cookie dough balls you can use a cookie scooper or just pinch off the dough and roll it into a ball 
  • Be sure to store in the refrigerator between snacking.

Ingredients
  

  • 1/2 cup Cashew Butter
  • 1/4 cup maple syrup
  • 1/4 tsp Salt
  • 1/2 tsp Vanilla Extract
  • 3/4 cup Oat Flour
  • 1/2 cup Coconut Sugar
  • 2 tbsp Cinnamon

Instructions
 

  • Combine cinnamon and sugar in a bowl and set aside.
  • In another bowl, using a mixer, combine cashew butter, maple syrup, salt, and vanilla extract and mix until smooth
  • Gradually add in oat flour and mix well.
  • Use a cookie scoop or pinch off the dough. Roll into balls, then roll in cinnamon-sugar mixture.
  • Store in your fridge for up to 5 days.

Notes

  • To make into a no-bake cookie, simply flatten out the dough ball on parchment paper, then add crisscrosses with a fork.
  • Store in an airtight container at room temperature or in the refrigerator.
