Let’s face it sometimes delicious healthy desserts are hard to come by which is what inspired healthy peanut butter blondies. Not to mention it’s hard to find desserts that are gluten-free and that actually uses whole food ingredients.
How in the world can blondies be healthy?
First off, there is zero refined sugar and no processed additives.
In addition, my version of peanut butter blondies is made with only wholesome foods like peanut butter, oat flour, natural honey, and coconut oil.
You would be surprised how you can make healthy desserts with whole ingredients, just like my No Sugar Added Ice Cream Sandwiches!

Benefits of Oat Flour
Oat flour is very nutritious and it’s full of antioxidants, fiber, protein, and a good source of carbs. It is also gluten-free and lower in carbs than whole wheat flour. Sometimes healthy ingredients can get expensive depending on what type of baking or cooking you are doing.
However, you can make your own oat flour at home to cut costs or purchase it at the store for cheaper than almond flour and some whole wheat flours.
Baking with Oat Flour
I am often asked if you can substitute oat flour for other flours when baking. If you are baking something that does NOT need to rise, you can definitely sub out other flour for oat flour. However, in dishes that need to rise, you would have to mix in another type of flour to ensure that it turns out as expected.

Ingredients You Need To Make Healthy Peanut Butter Blondies
- Oat Flour – You can purchase oat flour at your local market, if you prefer to make it at home, simply take 2 cups of steel-cut oats or rolled oats and blend until it is a powder. **Be sure to check your oats to make sure they are gluten-free. This will yield about 1 cup of flour.
- One egg
- Honey
- Coconut oil
- Natural peanut butter- Natural meaning no added sugar and no added oils
- Vanilla extract
- Milk – Almond milk is my preference
- Baking powder
- Salt
- Chocolate chips (I used a mix of chocolate and peanut butter chips)

How should I store healthy peanut butter blondies?
If there is any left :), store in an airtight container for up to a week. If you make your own oat flour and have leftovers, you can store that in an airtight container as well for months to come.

Healthy Peanut Butter Blondies with Oat Flour
Ingredients
Peanut Butter Blondies
- 1 Cup Oat Flour Spooned into your measuring cup, not packed tightly!
- 1 Egg
- 1/2 Cup honey
- 3 Tbsp Coconut Oil Melted, then cooled
- 1/2 Cup Natural Peanut Butter
- 1 Tsp Vanilla Extract
- 2 Tbsp Almond Milk Or milk of choice
- 1/2 Tsp Baking Powder
- 1/2 Tsp Salt
- 1/2 Cup Chocolate Chips
Drizzle (Optional)
- 1/4 Cup Peanut Butter Chips
- 1 Tsp Coconut Oil
Instructions
- Preheat your oven to 350F and line an 8x8 baking sheet with parchment paper.
- Add wet ingredients to a bowl and stir until well combined.
- Add oat flour, salt, and baking powder to wet ingredients and stir until combined. Do not overmix. Fold in chocolate chips.
- Pour batter into lined baking pan and bake for 15 minutes.
- Optional: Melt peanut butter chips and coconut oil in the microwave or on the stove. Drizzle on top of blondies once they are out of the oven.
I just tried them. Haven’t cooled enough to slice. They look good. I used swerve and added it to the dry ingredients. So far it doesn’t look like it’s affected the outcome. Also used light olive oil since my husband may eat some and can detect coconut in anything.
Oh my goodness, I cannot have many homemade desserts due to digestive issues, but this! This for one tasted amazing, and two so far my IBS hasn’t acted up! Thank you!
