So I’m gonna be honest.. I’m not really the biggest fan of recipes that use bananas as a substitute to make a recipe “healthier”. I’m very particular with the recipes I’ve done this with. AKA just this one: Healthy Banana Chocolate Chip Muffins. Sometimes the banana flavor is overwhelming and I’d rather just have the “unhealthy” version.
Definitely making that year round because sweet potatoes never go out of style if you ask me.
Lately I’ve had this problem where i NEED something sweet with my afternoon coffee. It’s that 2:00PM slump where you’re like “what am i even doing at work? what day is it? can i go take a nap?”
I know, I know.. this will only cause you to crash and blah blah blah — but i’m just being honest here. it’s a weakness of mine and i’m ok with it. it’s my little treat to push through until 3:00/4:00PM when my creativity starts to flow again.

I developed this vegan sickerdoodles recipe a few weeks ago ( which you know if you follow me on instagram ) and am SO sorry it’s taken me this long to share it.

OK — BACK TO THE VEGAN SNICKERDOODLES
This snickerdoodle recipe makes a large amount of cookies (36 medium-large cookies) because I was determined to get the ratio down. This ultimately resulted in me adding more and more oat flour to thicken up the batter.
If you’re making this recipe, I suggest cutting the measurements DOWN SLIGHTLY.
I gave some of the vegan snickerdoodles to Michael to take the work, but then single handedly ate the rest. #NOREGRETS
For this recipe you will need:
- Baking Sheets
- Parchment Paper
- Kitchen Aid // Hand Mixer // Food Processor
- Nutri Ninja (If making your own oat flour)
- Measuring Cups
- Mixing Bowls
