Bananadoodles: Gluten Free + Vegan Snickerdoodles
Gluten-free and Vegan Snickerdoodles use bananas, oat flour, apple sauce, and other simple ingredients to keep this snickerdoodle recipe healthy without losing flavor. Enjoy these healthy snickerdoodle cookies with your afternoon coffee or a late-night treat!
So I’m going to be honest… I’m not really the biggest fan of recipes that use bananas as a substitute to make a recipe “healthier”.
I’m very particular with the recipes I’ve done this with because sometimes the banana flavor is overwhelming. This can leave the recipe tasting completely different than the classic version!
However, I am VERY much into banana bread, and these vegan and gluten-free snickerdoodles are somewhere in-between banana bread cookies and snickerdoodles.
Therefore I have decided to name them banadoodles!
It’s pretty apparent my love for banana bread runs deep. I even made 7 Dairy-Free Versions with ONE batter HA.

Lately, I’ve had this problem where I NEED something sweet with my afternoon coffee.
It’s that 2:00 PM slump where you’re like, “What am I even doing at work? What day is it? Can I go take a nap?”
I start craving all the caffeine + a little sugar boost to get me through.
Having an afternoon treat is my way of pushing through until 3:00 PM or 4:00 PM when my creativity starts to flow again.
And that’s how these bananadoodles were born! Also known as Gluten-free and Vegan snickerdoodles!
I developed this vegan snickerdoodle recipe a few weeks ago (which you know if you follow me on Instagram ) and am SO sorry it’s taken me this long to share it.

Things to know about this Vegan and Gluten-Free Snickerdoodle Recipe:
This recipe makes roughly 18 cookies depending on the size.
I used a cookie scoop for the ones shown in my pictures, but I was very generous will how much I stuffed the cookie scoop!
I gave some of the vegan snickerdoodles to Michael to take the work, but then single-handedly ate the rest. #NOREGRETS
What do I need to make Vegan Snickerdoodles?
For this recipe you will need:
- Baking Sheets
- Parchment Paper
- Kitchen Aid // Hand Mixer // Food Processor
- Nutri Ninja (If making your own oat flour)
- Measuring Cups
- Mixing Bowls
These healthy snickerdoodles are:

I’m actually planning on making another batch tomorrow because true life: I’ve been eating handfuls of cereal with my coffee (we just got this new coffee maker and I’m OBSESSED) to cure my afternoon sweet tooth.

Gluten Free and Vegan Snickerdoodles || Bananadoodles
Ingredients
Cookie Dough
- 2 Cups Oat Flour *I didn't buy oat flour, instead i made my own. Place whole oats in your blender/nutri-ninja and voila!
- 1/2 Cup Coconut Sugar
- 1/3 Cup Pureed Banana *must be pureed and not mashed -- use VERY ripe bananas!
- 1/4 Cup Coconut Oil
- 1/4 Cup Apple Sauce
- 1.5 Tsp Baking Powder
- 1/2 Tbsp Vanilla Extract
- 1/4 Tsp Salt
Coating
- 1/4 Cup Coconut Sugar
- 1 Tbsp Ground Cinnamon
Instructions
- Preheat oven to 350. Line two baking sheets with parchment paper, or lightly grease.
- In a bowl, whisk together oat flour, baking powder and salt. Set aside.
- Beat the oil and sugar at medium-high speed until light, about 1 1/2 minutes. Add apple sauce + bananas, beating well after addition. Add in vanilla extract. Scrape down the sides of the bowl and beat 30 seconds more. At low speed, add the flour mixture and mix until just blended
- In a separate bowl, make the topping by mixing cinnamon and sugar together.
- Refrigerate dough for 30 mins to 1 hour.
- Roll the dough into ~1 inch balls, then roll into cinnamon sugar mixture to coat completely. Flatten cookies into the desired shape on a cookie sheet. Tthey won't spread out much in the oven.
- Bake cookies 12-15 minutes until tops are crinkly and they are puffed and browned around the edges. Transfer cookies to a wire rack and cool completely.
- Store cookies in your fridge to make them last longer + serve with coffee 🙂
These are SO GOOD!!! The perfect combo of banana bread and snickerdoodle flavors for a little treat. I used almond flour since I was low on oats and they still turned out really yummy! Just a little softer probably because of the almond flour. Will be making again and again!

Up because I don’t care for banana substituted in recipes. However, you’re first paragraph had me intrigued! You are spot on with these- they are delicious! I made them for movie night at the theater (as a sub for all the junk we could buy) and my family devoured them. Think I will try these with coconut sugar since it doesn’t spike blood sugar as much as brown sugar would. Snickerdoodles are one of my son’s favorite cookie, so he will be excited if they turn out well!

Yes — absolutely!
We can’t have apple sauce daughter has a fructose malabsorption what would you use instead?
You could most likely substitute more pureed banana. That or more coconut oil. I haven’t tried it any other way unfortunately!
Could I replace the 1/4 cup applesauce with another 1/4 of mashed banana…so 1/2 cup total of banana? I’m allergic to apples. Or do you think it would be better to replace it with something else?
You could try more pureed banana or more coconut oil. I haven’t tried it any other way that listed above, but I hope it works!!
What if I double the applesauce and nix the coconut oil? Do you think that will impact the flavor/texture? These look delish!!
I’ve only tried it the way listed above, but you could experiment with it and if it’s too dense add some coconut oil later. I’d be hesitant to make them without any fat.

These are my favorite cookies and look great as just regular snickerdoodles let alone gluten free. I’ll have to try the oat flour trick for the next time I bake some bread as well.
