Gluten-Free No Bake Cookies with Peanut Butter are easy, delicious, and made with whole simple ingredients! Even if you aren’t a baker, you have to try making these! Ready in just 15 minutes and no baking!
My two favorite baking ingredients by far are peanut butter and chocolate! If you follow me on IG you will know this because recently I have been on a baking kick with making gluten-free chocolate chip muffins, fudgy sweet potato brownies, and peanut butter blondies!
These no-bake gluten-free peanut butter cookies are much healthier than that classic recipe you may be familiar with. After they set, they are still just as chewy as when they were first made.
If you have gone to a gluten-free lifestyle by choice or have recently been diagnosed with celiac, you know gluten-free recipes can be hard to find! Also shopping for ingredients and scanning labels can turn into an all-day job!
Some people say that any flour other than white all-purpose tastes different when baking, I have to disagree! You would never know the difference in these no-bake cookies! But I mean really, anything with peanut butter in it is a winner in my book!

What’s in Gluten-Free No Bake Cookies?
Natural Peanut Butter – Make sure that there are no extra additives. My favorite brand is from Trader Joes! The salt to peanut ratio is PERFECT! I also love the Simple Truth Brand at Kroger and Kirkland brand at Costco.
Maple Syrup – Find pure maple syrup, many times when you are looking for healthier ingredients there are still added sugars if you aren’t checking the labels. I like this brand.
Oat Flour – Make your own by grinding gluten-free oats! Most local stores carry oat flour too. You can use this kind of flour in any baking recipe unless it requires rising. Then you will want a half and half blend or regular almond flour.
Other Ingredients: Salt and vanilla extract

Can I Substitute a Different Nut Butter to Make Gluten-Free No Bake Cookies?
Yes! Try cashew butter or almond butter and use the same measurements. Feel free to add in oats or cocoa powder for different flavors when using a swap for peanut butter!
How To Store
Leftover cookies can be stored in an airtight container at room temperature or in the refrigerator.

Gluten Free No Bake Cookies with Peanut Butter
Ingredients
- 1/2 cup Peanut Butter
- 1/4 cup maple syrup
- 1/4 tsp Salt
- 1/2 tsp Vanilla Extract
- 3/4 cup Oat Flour
Instructions
- Combine all ingredients except the oat flour and mix well. Use your mixer or food processor.
- Gradually add in oat flour until smooth.
- Use a cookie scoop, or pinch off cookie dough and flatten onto parchment paper.
- Use your fork to make crisscrosses after flattening. Store in a container in the refrigerator or at room temperature.
They came out absolutely delicious! I substituted peanut butter with almond butter. I also mixed in some ground flaxseeds, cinnamon and ginger powder, as well. Will make them again. Thank you very much for this simple yet wonderful recipe!!
