No Bake Apple Cinnamon Oatmeal Cookies
These no bake apple cinnamon oatmeal cookies are so easy to whip up, made with healthier ingredients, and packed with fall flavors with an ultra chewy texture.

Even though this time of year really gets us in the fall baking spirit, I still like the thought of no bake cookies.
These are packed with apple flavor from using dried apple chips. It’s also a great way to use up extra apples if you have made a trip to the apple orchard!
In the past, I’ve made baked apple cookies that were absolutely delicious. They call for instant oats too, so if you have leftover ingredients you can totally make a batch of these as well.
My dairy free cinnamon apple banana bread is also another fave this time of year. It’s got a layer of fresh apple chunks and made with clean ingredients.

Ingredients Needed
Cinnamon Apple Chips – some from the grocery store or homemade would work. See how to make them using fresh apples by scrolling down. About 1 medium apple should be enough.
Quick oats – I do not recommend old-fashioned oats. Since these are no bake, it will change the texture.
Nut butter – Pick your favorite. I prefer peanut butter or almond butter. If you have a nut allergy you can also use a seed butter such as sun butter or tahini.
Pure maple syrup – Be sure it is not maple flavored syrup! Honey can also be used.
Melted coconut oil
Vanilla extract
Ground Cinnamon
White chocolate chips – to drizzle over top

How to Make Apple Cinnamon Cookies
In a large mixing bowl, combine all of the ingredients.
Roll the cookie dough balls and place on a large cookie sheet lined with a piece of parchment paper. Flatten just a little bit.
Refrigerate for 20 minutes.
Add the white chocolate chips to a small bowl and melt in the microwave in 15 second increments, stirring between each cycle.
Drizzle the chocolate over top and serve.

Tips for Making
To help with the dough, use a medium cookie scoop.
For best results, if you are making your own apple chips do not underbake them. You want them to have a nice crunch!
You can also use a simple glaze on top like in my healthy apple oatmeal cookies recipe instead of chocolate or omit the drizzle all together.

Making Your Own Apple Chips
Choose your apples. Granny Smith apples are a little more tart, while fuji apples will be a little sweeter.
Core the apple and slice into very thing slices. Place on a large baking sheet. Sprinkle with cinnamon or apple pie spice.
Bake for 1 hour at 200 degrees.
Chop them into small pieces.

How to Store
Keep leftover cookies in an airtight container in the refrigerator or at room temperature for up to 5 days.
You can also freeze for up to 1 month.

Ingredients
- 1 cup Cinnamon Apple Chips
- 1 cup quick cooking oats
- 1/2 cup nut butter of choice
- 1/3 cup maple syrup or honey
- 2 tbsp melted coconut oil
- 1 tsp vanilla
- 1/4 tsp cinnamon
- white chocolate for drizzling
Instructions
- Combine all the ingredients in a large bowl and mix until evenly combined.
- Roll into desired size and flatten slightly.
- Place on a baking sheet lined with parchment paper.
- Place in the fridge for ~20 minutes.
- While cookies are in the fridge, melt your white chocolate in 15 second increments in the microwave, stirring between.
- Drizzle on cookies, allow to harden, and enjoy!
