Mediterranean Cucumber Salad
Mediterranean cucumber salad comes together in just a few minutes, using 5 fresh ingredients, and is tossed in a homemade vinaigrette that is bursting with flavor!
Warmer weather will be here soon, and many of you may already know but I live off of salads most of the year anyway, but I thought this one would be a good switch up.
It’s so refreshing and made with healthy ingredients, but the flavors really take the salad to the next level.

These are on repeat during the spring and summer at our house.
Ingredients Needed:
For the Salad:
- Cucumbers – go with hot house cucumbers or English. Some of the skins on the other varieties are a little bitter. If that’s all you can find, just peel them first.
- red onion
- grape tomatoes – cut these in half.
- feta cheese – I like using seasoned feta like the tomato and herb or Mediterranean variety.
- Kalamata olives
- Pepperocinis – chop before adding to the salad.
For the Dressing:
- olive oil – make sure it’s high quality olive oil
- oregano
- pink salt
- black pepper
- lemon juice
- red wine vinegar
How to Make Mediterranean Cucumber Salad
Combine all of the salad ingredients in a large mixing bowl.
In a medium bowl whisk all of the salad dressing ingredients together.
Pour the dressing over the salad and toss to coat, then serve.
How to Store
Keep leftover salad in an airtight container in the refrigerator for up to 3 days.
Variations
- Protein – to make a full protein packed lunch, add in some tuna, chickpeas, or shredded chicken.
- Onions – red onions have a really bold flavor, if you don’t like them you can leave them out.
- Grains – add in some cooked quinoa, farro, or couscous to bulk the salad up a bit. You may need to use a little more dressing.
- Fresh herbs – some like to use fresh dill and/or parsley for more flavor.
What to Serve With
Crockpot BBQ Chicken Thighs or air fryer bbq chicken is perfect because neither of the flavors overpower each other and they are really easy recipes.
Spicy chicken burgers are also a great choice, or any of your other favorite burgers.

Mediterranean Cucumber Salad
Ingredients
For the Salad:
- 3 Large Cucumbers sliced
- ½ red onion chopped
- 1 package grape tomatoes halved
- 6 oz seasoned feta cheese tomato and herb or mediterranean
- 6 oz kalamata olives
- ¼ cup chopped pepperoncinis
For the Dressing:
- ¼ cup olive oil
- 2 tsp oregano
- 1 tsp pink salt
- 1 tsp black pepper
- 2 tbsp lemon juice
- 1-2 tbsp red wine vinegar
Instructions
- Add all of your salad ingredients to a large bowl.
- In a separate bowl or liquid measuring cup, add your ingredients for the dressing. Whisk together.
- Pour dressing on top of salad and toss well.
- Serve immediately.
