If you have leftover dates, I have a whole recipe to make the fudgiest date brownies if you want them like a normal batch.
What Are Truffles?
So originally truffles were an expensive delicacy in Europe that are fungi (in the mushroom family). However, these are not the same as dessert truffles. These are called truffles because they resemble the mushroom like fungus.
Chocolate truffles are typically made with ganache, but since we want these to be vegan friendly and healthier, my version is a little different.
Ingredients Needed
- unsalted creamy almond butter – you can also swap this for your favorite nut or seed butter. Use the natural drippy kind.
- pitted medjool dates – add natural sweetness
- high quality cocoa powder – because the chocolate taste is very prominent in this dessert be sure to use high quality powder. If you don’t you will be able to tell the difference.
- maple syrup – if you aren’t vegan you could also use honey instead.
- vanilla extract
- salt
How to Make Healthy No Bake Brownie Truffles
Place the dates into a food processor or high speed blender and pulse until they form a paste. Then add the almond butter and puree until smooth.
Add the cocoa powder, maple syrup, vanilla, and salt. Pulse until combined.
Scoop out the dough into your hands or use a cookie scoop to make 2 inch balls. Rough them between your hands so that they are perfectly round.
Serve immediately or chill for later!
Tips for Making and Storing
- Keep leftover brownie truffles in the refrigerator for up to 3 weeks. To freeze, place them on a baking sheet and in the freezer for at least 30 minutes. Then transfer to a freezer safe bag or container.
