Birthday Cake Protein Bars are simple to make, healthy, packed with protein, and are so tasty that even your kids will love them!

If you have ever tried shopping for store bought protein bars, you know the struggle is real. The packaging looks like it’s going to taste so good, but when you taste the first bite, all expectations are out the window. 

For some it’s texture, for others it’s the taste. Either way, finding healthy protein bars is a chore. Not to mention, you think you are eating healthy because it’s a protein bar, but most of the time there is so much added sugar, carbs, and processed ingredients that it really cancels everything out. 

I actually made these birthday cake protein bars for my son’s first birthday party! I know who serves protein bars at a child’s party. BUT THEY WERE SO DELICIOUS, I had to. Everyone loved them!

Why We Love Homemade Cake Batter Protein Bars

Ingredients Needed 

  • oat flour – I recommend store-bought for this recipe because you want the oat flour to be super fine!
  • cake batter protein powder – if you can’t find cake butter protein just swap for vanilla instead
  • salt
  • natural cashew butter – cashew butter has a neutral flavor. If you sub with almond or peanut butter you will definitely taste the difference. Still delicious, but not the “birthday cake” flavor 🙂
  • Honey – swap for maple syrup for a vegan-friendly version
  • almond extract – this is what gives it a birthday cake taste so do not sub with vanilla!
  • melted coconut oilRefined coconut oil is mostly flavorless and has a higher smoke point than unrefined coconut oil. You can use either one!
  • sprinkles 

How to Make Birthday Cake Protein Bars From Scratch 

Add the oat flour, protein powder, and salt to a large bowl. 

Mix in the cashew butter, honey, almond extract, and melted coconut oil. 

Mix the dough using your hands. Knead it as you would if you were making bread. The texture will be similar to that of play-doh.

Ass 2 tablespoons of sprinkles and make sure they are well distributed. Add up to 1/2 tablespoon more coconut oil if the dough is too thick.

Press the protein batter into an 8×4 loaf pan and sprinkle the top with the remaining sprinkles. Lightly press them down. 

Chill in the fridge for at least 1 hour. Slice the protein bars and serve. 

Store leftovers in the fridge for up to 2 weeks.

Birthday Cake Protein Bars

Course Breakfast

Ingredients
  

  • 1 1/8 cup oat flour
  • 1/3 cup cake batter protein powder Can sub vanilla
  • 1/4 tsp salt
  • 1/2 cup natural cashew butter cashew butter has a neutral flavor. If you sub with almond or peanut butter you will definitely taste the difference. Still delicious, but not the “birthday cake” flavor
  • 1/4 cup honey Sub maple syrup if vegan
  • 1 tsp almond extract this is what gives it a birthday cake taste so do not sub with vanilla!
  • 1.5 tbsp melted coconut oil*
  • 4 tbsp sprinkles

Instructions
 

  • To a large bowl, add your oat flour, protein powder, and salt.
  • Next, add your cashew butter, honey, almond extract, and 1.5 tbsp of melted coconut oil.
  • Using your hands, mix your dough together, kneading it like you would bread. Your dough will be similar to playdough.
  • Next, mix in 2 tbsp sprinkles.
  • Once sprinkles are well distributed, press the dough into an 8×4 bread pan and sprinkle the remaining 2 tbsp sprinkles on top. Lightly press them into the top with your hands.
  • Let the pan sit in the fridge for at least 1 hour before slices into protein bars. Store in the fridge for up to 2 weeks.

Notes

*If dough is too thick, add 1/2 tbsp more coconut oil
