Not only do they save time (so you can eat your sweets instantly!) but minimal equipment is needed. You can make these easy oatmeal peanut butter cookie dough cups virtually anywhere there’s a microwave.. Or stove!
I have always been intrigued by the amount of edible cookie dough recipes on Pinterest yet had never given them a try myself. No idea why it took me so long to throw together my own recipe because DANG, these are good.
I ran this poll on instagram a while back and it was obvious that people have a seriously hard time choosing between cookie dough or actual cookies. I’m pretty sure I’m team cookie dough which is why this recipe also needed to come to life.
You can use whatever nut butter you desire, but for these peanut butter cookie dough cups I used salted peanut butter. The salted part is SUPER important. If your nut butter isn’t salted you can easily add a pinch or two and voila!
I also chose to make my own oat flour for this recipe, but bob’s red mill sells an amazing oat flour you could also use if you don’t have a blender!
I always toss rolled oats in my nutri-ninja (We have this exact set and love it. We also have their coffee pot and are obsessed!) when I need oat flour because I don’t bake with it enough to need to purchase a whole package! You can also find gluten free oat flour which makes this easy, no-bake dessert recipe gluten-free, dairy-free and vegan!
All you will need for these oatmeal peanut butter cookie dough cups is:
- Oats (or oat flour)
- Nut butter of choice (preferably salted)
- Maple Syrup
- Coconut Oil
- Vanilla Extract
- Chocolate Chips!
These peanut butter cups take less than 15 minutes to prep. Most of the “baking” time comes from anxiously waiting for your chocolate to cool in the fridge.
Be sure to read through the instructions because step number 5 is really important to achieve the classic peanut butter cup “look”!
I simply microwaved my chocolate and coconut oil in the microwave to make the coating, but you could also slowly heat over the stove as well. (I know some of y’all aren’t fond of the microwave!)

Oatmeal Peanut Butter Cookie Dough Cups
Ingredients
- 1/2 Cup Oat Flour
- 1/4 Cup Creamy Salted Peanut Butter
- 1.5 Tbsp pure maple syrup
- 2 Tsp Coconut Oil melted
- Splash Vanilla Extract
- Pinch Salt *If nut butter is NOT salted
- 1/2 Cup Chocolate Chips
- 1 Tbsp Coconut Oil
Instructions
- Add all of your ingredients into a large bowl and combine until dough forms. Once formed, place dough in the fridge.
- Melt 1/2 cup chocolate and 1 tbsp coconut oil in a bowl. Line muffin tin with muffin liners while the chocolate is melting.
- Pour enough chocolate to cover the bottom of your muffin liners and place in the fridge until hard.
- Once your chocolate has hardened, take the dough out of the fridge and roll into balls. Place a ball on top of each chocolate layer and press down so the top is flat.
- Do not allow the dough to touch the muffin liners on the side. You want to leave space for the chocolate to drip down, completely cover the dough and connect to the bottom layer of chocolate.
- Place in the fridge until chocolate is hardened + enjoy!
What kind of chocolate chips did you use? semi-sweet?
I used semi-sweet chips but you can use any chocolate and it will work the same! I would be careful with white chocolate though. It tends to burn easily.
