Such a fun way to turn an ordinary chicken dinner into something more exciting!

If you have never tried making foil packet meals you are missing out.
Some call these hobo packets and a lot of people make these kinds of recipes when they are camping.
So we aren’t camping but I decided to experiment, and they turned out so good. I love that the foil pack dinners turned out to be no fuss, with minimal clean up, and the best part is that you can always use whatever ingredients you have on hand to customize.
Confession time. This was such an easy recipe and we loved it so much that I created a collection of 22 foil packet recipes that are almost life changing! Next time we are going to try the salmon foil packets and serve with sweet potatoes!

How to Make Teriyaki Chicken Foil Packets
Tear off 4 12×12 sheets of foil.
Combine all of the homemade teriyaki sauce ingredients into a small saucepan and whisk together.
Bring the sauce to a boil and whisk until it begins to thicken. Then remove it from the heat and set it aside so it can thicken a little more.
Cube the chicken breasts, prep the veggies, and add them to a large bowl.
Pour in one cup of teriyaki sauce and toss so everything is coated evenly.
Divide the chicken mixture evenly and place some onto each foil square.
Fold foil to cover the chicken and veggies, pinch the ends together so nothing spills out. Repeat for each individual foil packet.

Oven Instructions
Allow the oven to preheat to 350 degrees.
Place the teriyaki chicken packs on a baking sheet and cook for 30 minutes or until the internal temperature of the chicken reaches 165 degrees.
Once the chicken is done, open the packs and top with additional sauce if desired.
Grilling Instructions
Preheat the grill to medium-high heat and place foil packets directly on the grates.
Cook the chicken packets for about 7 minutes then flip each chicken packet and cook for another 5 minutes.
Add more sauce before serving if you would like.
Tips for Making
- If you are using this as a meal prep recipe, dice the chicken and veggies ahead of time, along with pre making the sauce. This will make it easier when you are ready to cook.
- This is the perfect meal to actually cook when you are camping. You can place the foil packs directly over a campfire. However, the cooking time may vary since your fire may be hotter or cooler and the packets are on direct heat.
- Before serving, use a meat thermometer to ensure the internal temperature of the chicken reaches 165 degrees F.
- To make sure the foil doesn’t stick on the grill, coat the grates with non stick cooking spray first.
- Make sure your squares of aluminum foil are big tender to hold the chicken and mixed vegetables so they don’t spill out. Tuck the sides of the foil in really good.
- We recommend only using boneless chicken breasts, as other cuts of chicken take much longer to cook.
Variations
Bbq chicken foil packets – chop your favorite veggies. Season the chicken with salt, black pepper, and garlic powder. Use your favorite barbeque sauce.
Tex Mex – season chicken with taco seasoning, and add corn, black beans, salsa, and diced jalapenos for a fun twist.
Buffalo chicken foil packets – use ranch seasoning and toss the chicken in Frank’s Buffalo sauce, then add cheese on top of the chicken.
Potatoes: If you decide to make a variation, when using regular red potatoes slice them into quarters so you don’t have to increase the cook time or use the baby red potatoes. Pre-cooking them first will also reduct the cooking time.
Other veggies: green beans, corn, and mushrooms would also taste great in foil dinners. Use any of your favorite vegetables.
Pineapple: a scoop full of sweet pineapple tidbits would also be great in this teriyaki recipe.
How to Store
Keep leftover teriyaki chicken dinners in an airtight container for up to 4 days in the refrigerator.
Can I Use Store-Bought Teriyaki Sauce?
Sure! I really love making it homemade, but if you are short on time and want to grab some from the store, that will work just as well.
Primal kitchen has a no soy terikayi sauce if you are looking for a soy-free and gluten-free teriyaki sauce.

What Should I Serve Foil Packet Chicken Recipes With?
This is an easy one-pan type of dinner so we usually don’t serve any sides (plus that means there’s very little prep involved), but here are some ideas if you want something extra.
- Rice
- Cauliflower Rice
- Zoodles
- Pasta
- Other Veggies
- Dinner Salad

Frequently Asked Questions:
Is it OK to wrap chicken in aluminum foil?
Yes. It is perfectly safe and results in tender, juicy chicken. Plus, clean up is a breeze!
Can aluminum foil go in an air fryer?
Yes, you can cook it in an air fryer. It can actually make cooking with the air fryer easier!
Can I use regular aluminum foil?
Yes, but I recommend heavy-duty aluminum foil. It is thicker and will keep your foil meal packets from ripping and spilling out.
Please use caution when opening your chicken foil packet dinner because it will be HOT from the steam!
Teriyaki Chicken Foil Packet Dinner

- 4 boneless skinless chicken breasts – cut into 1 ½ inch pieces
- 2 bell peppers chopped
- 1 small onion chopped
- 2 cups broccoli florets
- 1 cup sugar snap peas
Teriyaki Sauce*
- 1 cup soy sauce
- 3 Tbsp rice vinegar
- 3 clove garlic minced
- 3/4 cup honey
- 1 tbsp sesame oil
- 1 tbsp cornstarch + 2 tbsp water
Instructions
- Preheat the oven to 350F and lay four 12×12 inch squares of foil on your work surface.
- While the oven is preheating, whisk together 1 tbsp corn starch and 2 tbsp water. Set aside. Whisk together the remaining sauce ingredients in a small saucepan.
- Bring the mixture to a boil, then pour in water and corn starch mixture. Whisk until the sauce begins to thicken. Set aside and allow to thicken and cool while you prepare the foil packets.
- Place cubed chicken, peppers, onions, broccoli, snap peas, and 1 cup of sauce in a bowl. Toss to evenly coat.
- Distribute the chicken and vegetable mixture evenly between the sheets of foil and fold the foil over the chicken and vegetables to close off the pack. Pinch the ends together so the pack stays closed.
- For Oven: Transfer the chicken foil packs to a baking sheet and bake for 25 minutes or until chicken is cooked through and veggies are tender.
- If cooking on the grill: Preheat the grill to medium-high heat. Place foil packets on grill and grill for 6-7 minutes, then flip over and grill for an additional ~5 minutes (depending on the thickness of the chicken) or until chicken is cooked through.
- When chicken is done, carefully open the foil packs, drizzle with more sauce as desired, serve immediately and enjoy!
I was wondering if this could be made ahead and frozen? I’m starting chemo soon and need meals that are easy, healthy and delicious. Thanks!
Hi! You can freeze it but need to transfer it to a heavy duty freezer bag and remove all the air (vacuum seal it) after its been fully cooked. Should last a few months in the freezer. Good luck with everything! You’re going to crush it.
Made these in the oven was a hit with the family. Will definitely make again. I change chicken breast for thighs my husband likes dark meat best, worked just great.
Thanks for the new menu rotation recipe!!
