Southwest Chicken Bake
This Southwest Chicken Bake is loaded with Tex Mex flavors, easy to make, and will become a family favorite quickly!
If you love tacos at all, you can now switch things up and keep the same traditional flavors!
When I’m trying to come up with dinner ideas, I want them to be easy especially, weeknight meals! This southwest dish is ready in 30 minutes and only needs a few ingredients to make a healthy delicious meal!
I should also add that if you have access to a microwave during lunch, you will want to make a double batch! It’s also freezer friendly too!

What You Need to Make Southwest Chicken Bake
Chicken – we went with boneless skinless breasts
Veggies – black beans, corn (can be frozen or canned), tomatoes and chiles (aka Rotel)
Spices – garlic powder, cumin, salt, pepper
Cheese – Choose your favorite blend or go with cheddar!
Making the Southwest Chicken Bake
Preheat your oven and add your spices to a small bowl or ramekin and mix. Dice the chicken into pieces and season with the spice mixture.
Add the seasoned chicken to a casserole dish and cover it with corn, black beans, and Rotel.
Top it off with your shredded cheese and cook!
Can I Use Chicken Thighs, Tenders, Or Other Cuts Of Chicken?
Yes, you can! If you decide to use any cut other than boneless skinless breasts, you will probably have to increase the cooking time! Just keep an eye on the cheese so it doesn’t burn and cover with foil if needed. As long as it reaches 165 degrees it will be fine!
Can You Make Southwest Chicken in the Crockpot?
You can. Combine all ingredients into the crockpot. You can leave the chickens whole and shred later or dice like the regular instructions. Add the cheese towards the end of the cooking time. Cook on low for 4 hours.
How To Store Leftover Southwest Chicken
Store in an airtight container for up to 4 days in the refrigerator.
Can You Freeze It?
Allow for the southwest dish to cool completely. Then add to a freezer-safe container or bag. It will keep fresh for up to one month!
Could You Use A Different Type of Meat?
Actually, you could, we just haven’t tested that version of the recipe. Other ideas for meats include ground beef, turkey, and even ground chicken!

This meal is super simple to cook, so keep your side dishes simple too!

Southwest Chicken Bake
Ingredients
- 1 lb chicken cut into cubes
- 1 cup black beans rinsed and drained
- 1 cup corn either frozen and thawed or canned (rinsed + drained)
- ¾ cup diced tomatoes with green chilis rotel
- ½ tsp garlic powder
- ½ tsp cumin
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup cheddar cheese or cheese of choice
Instructions
- Preheat your oven to 375F.
- Slice your chicken breast into ~1” pieces.
- Mix garlic powder, cumin, salt and pepper.
- Season your chicken breast with the mixture and place in an 8x8 casserole dish.
- Top with corn, black beans, & tomato/green chilis.
- Lastly, top with shredded cheese and bake for 30-35 minutes or until chicken is fully cooked.
So good!!! Even my 3 year old loved it.
