Ranch Chicken Bake
Calling all Ranch Lovers! This Cheesy Ranch Chicken Bake is filled with veggies, easy to make, and is ready in less than 30 minutes! Talk about a healthy weeknight meal!
I love anything that has ranch in it, and I know most people do too!
Even if they don’t like ranch dressing, they like the Ranch seasoning!
There are so many easy recipes you can use the seasoning for everything from dips and sauces to main course meals like this one!
Ranch Chicken Bake is an easy one-pan meal and can be doubled if needed! Also great for meal prepping and making ahead of time!
Ingredients for Ranch Chicken Bake
Chicken – We are using boneless skinless chicken breasts, you can always use tenders or thighs as well
Baby Potatoes – If you don’t want to buy these the next best recommendation would be red-skinned potatoes just diced up
Broccoli Florets – Use fresh or bagged broccoli (usually found in the cold produce section)
Carrots
Oil – we recommend olive oil or avocado
Parmesan cheese
Hidden Valley® Ranch Dip Mix – I’m sure a generic brand would be just as good
Salt and Pepper
What Temperature Should The Chicken Be When It’s Done?
Use a thermometer to check the internal temperature of the chicken and make sure it reaches 165F.
Anything lower than that is not fit to eat when it comes to poultry!
Tips for Making and Meal Prepping
- Line your cookie sheet with parchment paper or foil. This will help with sticking and makes cleanup much easier!
- You can use Ziploc bags or large bowls when seasoning the chicken and veggies. I actually like using bags. It’s less messy and you just toss them when you are finished!
- Be sure to cover both the chicken and the vegetables evenly with the seasonings.
- Let the ranch chicken cool completely before meal prepping and make a double batch to get you through the week!
Can I Add Different Vegetables?
Of course! If you don’t like some of the veggies above or if you want to add more feel free to do so!
Cauliflower and asparagus would be a nice variety if you like those!
Can You Use Homemade Ranch Seasoning?
Yep! If you have your own recipe for ranch, by all means, go for it!
Ranch seasoning is essentially garlic powder, onion powder, salt, dill, pepper, and maybe some parsley!
About a teaspoon of each should be good! Use a ½ tsp of salt and dill then do a taste test.
Dill alone can be somewhat strong so it doesn’t take a lot. Remember you can always add more if needed, so go easy to start with!

Uncovered is best for this recipe. Baking allows the chicken and vegetables to develop a crispy exterior.
What to serve with ranch chicken bake?
Between the protein from the chicken, quality carbs from the potatoes, healthy fats from the oil and parmesan, and fiber fill veggies… this healthy chicken bake is a whole meal on its own!
Ranch Chicken Bake
Ingredients
- 1.5 lbs boneless skinless chicken, cubed
- 2 cups halved baby potatoes
- 4 cups broccoli florets
- 2 cups baby carrots
- 2.5 TB olive oil or avocado oil
- 1/2 cup grated Parmesan cheese
- 1 packet ~4 TB Hidden Valley® Ranch Dip Mix
- salt & pepper to taste
Instructions
- Preheat the oven to 400F.
- Place foil or parchment paper on a lined, rimmed baking sheet.
- Place chicken, veggies, and olive oil in a large bowl with a lid or in a ziploc bag. You may need to use two bags! Shake to coat evenly.
- Next, add Parmesan cheese, Hidden Valley Ranch mix, salt and pepper and shake again until veggies and chicken are well coated.
- Pour your chicken and veggie mixture onto the prepared baking sheet
- Bake for a total of 25-27 minutes, flipping halfway through.
- Serve warm, and ENJOY!
This was a quick easy flavorful meal I could fix for my parents when my mom (88) cracked her arm and could not cook for them . They enjoyed it and it worked well for dad’s sugar .
Made this and subbed the baby potatoes for 2 bell peppers because that’s what I had on hand. This turned out delicious! I would definitely make this again, especially because I’m trying to incorporate more veggies into my meal rotations.
Easy to make and a real hit with my husband and daughter.
