Vegan Baked Oatmeal

This Vegan Baked Oatmeal is full of flavor without added sugar! It’s easy to make and you don’t need any fancy ingredients! Great for breakfast meal prepping too!

Ingredients
  

  • 2 cups old-fashioned oats
  • 2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt reduce to ¼ if your peanut butter has salt added!
  • 2 over ripe bananas
  • 1 1/3 cups almond milk
  • ¼ cup creamy peanut butter natural - no added sugar or oils
  • ¼ cup unsweetened applesauce
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 375° F.
  • In a large bowl combine the oats, cinnamon, baking powder and salt.
  • In a separate mixing bowl, mash the bananas, then add the almond milk, peanut butter, applesauce, and vanilla extract. Stir until well combined and few to no lumps remain.
  • Combine wet and dry ingredients.
  • Pour into an 8x11 baking pan.
  • Bake uncovered until the top of the oatmeal is golden and the mixture is set, about 30 minutes. Remove and allow oatmeal bake to cool for 5 minutes.
  • Slice into 8 servings. Serve with drizzled peanut butter and banana slices, if desired.
