Vegan Baked Oatmeal (No sugar added)
This Vegan Baked Oatmeal is full of flavor without added sugar! It’s easy to make and you don’t need any fancy ingredients! Great for breakfast meal prepping too!
I love making oatmeal for breakfast, but on busy mornings that is almost impossible! When you make a batch of this vegan oatmeal you can bake it ahead of time and keep it throughout the week for an easy healthy breakfast!
Most baked oatmeal recipes are full of added sugar, but this one is naturally sweet from using whole ingredients!
If you aren’t used to cooking with oatmeal, I use it in all different types of recipes like these:

Another way to make oatmeal ahead of time is by letting it sit overnight, my favorite is Carrot Cake Protein Overnight Oats!
Ingredients for Vegan Baked Oatmeal
Oats – be sure to use old fashioned oats instead of quick cooking. The quick cooking oats get a little too soggy. If you are gluten-free, Bob’s Red Mill Oats is a good choice.
Milk – we are using almond milk, you could also use coconut milk or oat milk as well
Bananas – be sure they are ripe! Riper bananas help give the oatmeal a sweeter taste without having to add additional sweetener.
Peanut Butter – As always we are using natural peanut butter. That means there are no added sugars or oils, simply peanuts and a little salt. Trader Joe’s is one of my favorites (see what my TJ grocery hauls look like)!
Applesauce – opt for the unsweetened version
Other Ingredients: cinnamon, salt, baking powder, vanilla extract
How To Make the Best Oatmeal for Vegans
Preheat your oven and prepare your baking pan. You can spray with non-stick spray or line with parchment paper if needed.
Combine the oats, baking powder, cinnamon, and salt into a small bowl and set aside. In a separate mixing bowl, combine the remaining ingredients, start with mashing the bananas first.
Add the dry ingredients into your banana mixture and stir, but no need to overmix.
Pour into your baking pans and bake uncovered. After about 30 minutes your baked oatmeal will start turning a golden color. Remove from the oven and let it sit before slicing.
Serve with your favorite toppings, ours are peanut butter and bananas!
How To Store Baked Oatmeal
The baked oatmeal can be stored in the fridge for up to 5 days. When ready to eat, reheat individual servings in the microwave for 30-45 seconds and top as desired.
Can You Freeze Vegan Baked Oatmeal?
Yes! Once your baked oatmeal squares have cooled completely, add them to a freezer-safe container or use a vacuum sealer. Store in individual portions to make it more convenient for an on-the-go breakfast!

Vegan Baked Oatmeal
Ingredients
- 2 cups old-fashioned oats
- 2 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt reduce to ¼ if your peanut butter has salt added!
- 2 over ripe bananas
- 1 1/3 cups almond milk
- ¼ cup creamy peanut butter natural - no added sugar or oils
- ¼ cup unsweetened applesauce
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 375° F.
- In a large bowl combine the oats, cinnamon, baking powder and salt.
- In a separate mixing bowl, mash the bananas, then add the almond milk, peanut butter, applesauce, and vanilla extract. Stir until well combined and few to no lumps remain.
- Combine wet and dry ingredients.
- Pour into an 8x11 baking pan.
- Bake uncovered until the top of the oatmeal is golden and the mixture is set, about 30 minutes. Remove and allow oatmeal bake to cool for 5 minutes.
- Slice into 8 servings. Serve with drizzled peanut butter and banana slices, if desired.
I love baked oatmeals and this is one of my favorites! So easy to make and you can do an add in if you want! We prefer chocolate chips in our household. Definitely have made this a few times!
