Chocolate Peanut Butter Cookie Dough Bars with Oatmeal (Vegan, Gluten-Free)
My version of healthy cookie dough bars is made with creamy peanut butter and oatmeal. Totally edible just the way they are, no baking required, vegan-friendly and gluten-free! The perfect dessert or snack!
Who’s guilty of eating cookie dough every time they make a batch of cookies? You can’t see me but my hand is in the air! I mean it’s almost weird if you don’t right? It’s almost impossible to keep your fingers out of the bowl!
These cookie dough bars are eggless, which means you never have to worry about you or your kids getting sick from raw eggs.
If you’re vegan you are in luck too because you don’t have to do anything to alter the recipe in order to indulge! Win, win right?
If you’re gluten-free, simply use gluten-free oats and gluten-free oat flour to make these gluten-free peanut butter cookie dough bars!

Ingredients for Cookie Dough Bars with Peanut Butter and Oatmeal
Peanut butter – As always, we are keeping it healthy here even with cookie dough. So be sure your peanut butter is all-natural! Simply peanuts and salt listed on the label. Trader Joes carries my favorite natural peanut butter. Read all my favorite Trader Joes products in this post!
Oat flour – if you don’t have any on hand you can simply blend oats until they are a powder. I use my ninja kitchen set to make my own oat flour in seconds!
Oats – Keep these whole! If you need gluten-free, just make sure you are using gluten-free oats! I used quick oats in mine, but you can use rolled oats as well.
Chocolate Chips – Duh, these just make everything better 🙂
Other Ingredients: vanilla extract, salt, maple syrup, and coconut oil.

- Mixing bowl (I have this set of five with lids!)
- Parchment paper
- Baking Pan
- Rubber Spatula

Can you freeze these?
Yes! After refrigerating until the chocolate sets, take them out and cut into portions. Then wrap with saran wrap and store in a Ziploc bag. You can also use a vacuum sealer, which works really well.
When you are ready to serve them again, pull them out about 15-20 minutes ahead of time so they can thaw.

- White chocolate chips
- M&M candies (Try this brand if you’re vegan!)
- Nuts
- Coconut
- Chocolate chips (in the middle layer)
- Reeses or homemade peanut butter cups
- Sprinkles
- Toffee pieces

Chocolate Peanut Butter Cookie Dough Bars with Oatmeal
Ingredients
- 1 cup Peanut Butter
- 1/2 cup maple syrup
- 1/4 tsp Salt Can omit if there is salt in your peanut butter.
- 1 tsp Vanilla Extract
- 3/4 cup Oat Flour
- 3/4 cup Oats
- 1 cup Chocolate Chips
- 1 tbsp Coconut Oil
Instructions
- Combine peanut butter, maple syrup, salt, and vanilla in a bowl. Stir until combined, then pour in oat flour and mix. Pour in oats and stir until evenly combined.
- Press evenly into 8x8 baking pan (lined with parchment paper).
- Melt chocolate chips and coconut oil in microwave stirring every 15-20 seconds. Be careful not to burn!
- Pour the chocolate mixture over cookie dough layer and place in the fridge until the chocolate has set.
- Cut into 16 squares. Enjoy!
