With the holidays quickly approaching I thought it was time to break out the gingerbread recipes!

I have a long list of gingerbread recipes coming your way so I hope you’re as big of a fan of this holiday flavor as I am. 🙂

To be honest, I had no idea how much I loved gingerbread until I made these muffins last week.

The only time I had encountered gingerbread was building gingerbread houses from a box. AKA super stale, cardboard “cookie” cutouts that were in no way bringing justice to the delicious flavor.

These Vegan and Gluten-Free Gingerbread Muffins were first on my list because muffins are my personal favorite treat, and it appears you all love them just as much!

These healthy gingerbread muffins are made in a blender so they truly could not be easier to make! 

I’m all about simple recipes over here though. Let’s be honest. 😉

Blender Healthy Gingerbread Muffins that are Vegan + Gluten-Free

I hadn’t heard of blender muffins before joining Instagram, but once they caught my eye I knew I had to create a blender muffin recipe of my own.

The fact you can add all of your ingredients to one kitchen gadget and you’re done?

SOLD.

Don’t forget about how easy the clean up for these vegan and gluten-free gingerbread muffins are either.

I let my blender soak in warm, soapy water while my muffins are baking and then clean out the blender while the muffins cool. This makes the process seamless. 🙂

You can also make these vegan and gluten-free gingerbread muffins in a food processor if you don’t own a blender.

The steps and outcome are the exact same.

I also added a simple vanilla glaze to my muffins for a little extra something! This step is optional, but I love how pretty the vanilla glaze makes the muffins look.

It’s always fun to make pretty food when you’re hosting or gifting a baked good. Don’t you think?

You could also dust these healthy gingerbread muffins with powdered sugar if you’re not a fan of icing.

I love how the powdered sugar imitates a dusting of snow. It really brings it all together!

Vegan and Gluten Free Gingerbread Muffins with Vanilla Glaze

For these Healthy Vegan and Gluten-Free Gingerbread Muffins you will need:

  • Oats (Not oat flour)
  • Cashew Butter
  • Cinnamon
  • Ginger
  • Nutmeg
  • Cloves
  • Coconut Sugar
  • Molasses (I used blackstrap)
  • Almond Milk (I used vanilla)
  • Maple Syrup
  • Baking Powder
  • Baking Soda
  • Vanilla Extract
  • Salt

You will also need a blender or food processor (I used my Ninja for this recipe), a muffin tin, muffin liners (I love these silicon non-stick liners!), a cooling rack, and a large plastic bag for drizzling the vanilla glaze.

According to this website, you can sub almond flour for oat flour. HOWEVER, in my recipe, I used whole oats and not oat flour. I have only made the recipe as listed above, but you could potentially swap the oats for 2 1/4 cup almond flour.

Vegan and Gluten-Free Gingerbread Blender Muffins

Ingredients
  

Gingerbread Muffins

  • 3 Cups Oats *Not oat flour (see post for almond flour substitute)
  • 2/3 Cup Cashew Butter
  • 1/4 Cup maple syrup
  • 1/4 Cup Coconut Sugar
  • 1/2 Cup Molasses Blackstrap
  • 1 1/2 Cup Almond Milk
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Pure Vanilla Extract
  • 2 Teaspoons Cinnamon
  • 1 Teaspoon Ground Ginger
  • 1 Teaspoon Ground Nutmeg
  • 1/4 Teaspoon Ground Cloves
  • 1/2 Teaspoon Salt

Vanilla Glaze (Optional)

  • 6 Tablespoons Powdered Sugar
  • 1/4 Teaspoon Pure Vanilla Extract
  • 1 Tablespoon Almond Milk

Instructions
 

Gingerbread Muffins

  • Preheat your oven to 375 F and line a muffin tray with 12 muffin liners.
  • Add all of your ingredients to your blender or food processor and blend until smooth.
  • Pour your batter into each muffin liner, filling 3/4 the way.
  • Bake for 20 minutes. You can check your muffins by inserting a toothpick and once it comes out clean, you know your muffins are done.
  • Cool your muffins on a cooling rack.

Vanilla Glaze (Optional)

  • While your muffins are cooling on a cooling rack, prepare your vanilla glaze by adding all of your ingredients to a bowl and stir until smooth.
  • Drizzle your vanilla glaze over your muffins with a spoon or by adding your glaze to a gallon plastic ziploc bag. Cut a small corner off and pipe out your glaze onto each muffin.
  • Enjoy!

  1. Hi! These sound amazing and I would love to make them so my son could try them as well. Unfortunately, he is allergic to nuts (and will not eat sunflower seeds or sun butter either). Are there any good substitutions for the nut butter in this recipe? Thanks!

    1. Hi! You could try tahini, coconut butter, or pumpkin seed butter? Those are the only ones that really come to mind. Hope you find something that works!
