Michael and I have lived in the same apartment complex for almost two years now. Something we really enjoyed about the complex is the community they’ve built amongst the residents.

The front office is constantly hosting events, people are incredibly inviting and it’s typical to find kids playing outside while their families are grilling out.

I’ve done a lot of cooking in my day, but one thing I’ve always been scared to attempt is grilling.

Thankfully I didn’t have to go far to learn how easy it actually is!

I was recommended to use the Kingsford Hardwood Charcoal Briquettes by a grill master (or so he calls himself) who lives in my building. He’s been grilling for 20 years and Kingsford coals is all he ever buys.

This came at the perfect time because not long after this exchange, The Home Depot reached out to collaborate with Kingsford for a grilling recipe!

Y’all… he wasn’t lying when he said Kingsford makes the best charcoal in the market.

How do I know? Because even as a first time griller, we had zero problems and our pineapple teriyaki chicken kebabs came out to perfection!

You could say beginner’s luck… but I’m pretty sure it wasn’t a coincidence 😉

Grilled Pineapple Teriyaki Chicken Kebabs

For these grilled pineapple teriyaki chicken kebabs you will need:

  • Chicken Breast
  • Brown Sugar
  • Soy Sauce
  • Fresh Pineapple Juice
  • Garlic
  • Cornstarch
  • Bell Peppers
  • Onion
  • Fresh Pineapple
  • Salt and Pepper

These grilled pineapple teriyaki chicken kebabs were gone in MINUTES. And for good reason.

The sauce is addicting, the chicken is juicy and there’s just something about grilled veggies and grilled pineapple that does it to me. There’s no better texture or flavor in my opinion.

Michael is a huge teriyaki chicken fan, and he can definitely be tough on my healthy variations of his favorite foods, but he LOVED them.

We will 100000% be making these kebabs and many other grilling recipes this Spring and Summer!

Grilled Pineapple Teriyaki Chicken Kebabs

Ingredients
  

  • 2 Boneless, Skinless Chicken Breasts Cut into 1 inch cubes
  • 1/3 Cup Brown Sugar
  • 1/3 Cup soy sauce
  • 2 Tbsp Pineapple Juice
  • 1 Tsp Minced Garlic Or two cloves
  • 1/2 Tbsp Corn Starch
  • 1/2 Tbsp Water
  • 1 Red Bell Pepper Cut into 1 inch cubes
  • 1 Green Bell Pepper Cut into 1 inch cubes
  • 1 Red Onion Cut into 1 inch cubes
  • 1 Cup Fresh Pineapple Cut into 1 inch cubes

Instructions
 

  • In a small saucepan, whisk together the brown sugar, soy sauce, pineapple juice, garlic, pepper, and salt. In a small bowl, whisk together the water and cornstarch. Slowly whisk into the mixture.
  • Bring to boil and boil about 1-3 minutes until the mixture just starts to thicken. Remove from heat and reserve ¼ cup of the sauce for later.
  • Marinate the chicken in the sauce in the fridge for at least 30 minutes. Thread the chicken on skewers along with the peppers, red onion, and pineapple.
  • Grill for 8-10 minutes until the meat is done to desired liking. Remove from the grill and baste with reserved sauce. Serve with rice if desired.
