Say “Hello” to your new favorite salad dressing. Made from just 3 simple wholesome ingredients and packed with zesty Mediterranean flavor, this creamy vegan Greek salad dressing is so good you’ll want to eat it by the spoonful. Resist the urge to grab the nearest spoon and instead use it to drizzle over this super simple Greek salad. You’ll be glad you did!
What is Greek salad dressing made of?
Salad dressings are one of the easiest things to make from scratch. All you’ve got to do is get the right balance of ingredients, mix them together and you’re good to go.
This easy vegan Greek salad dressing uses a combination of creamy hummus, zingy lemon juice and flavor-packed garlic to bring even the dullest salads to life. I used my 5 ingredient lentil hummus recipe because I thought the bright lemon juice would perfectly contrast the earthy flavor of the lentils. But feel free to use whatever type of hummus you have on hand.
Although the title says “3-Ingredient Creamy Greek Salad Dressing”, there are technically 4 ingredients in this dish. The final ingredient is water which you’ll need to thin out the simple Greek salad dressing so you can pour it over the salad. But I think we can all agree that water doesn’t really count as an ingredient, right?
Is Greek salad dressing good for you?
This easy homemade Greek dressing is definitely good for you. The primary ingredient is hummus which is made from chickpeas loaded with plant-based protein, as well as plenty of vitamins and minerals. Another reason this easy homemade greek salad dressing is so good for you is that it contains no added sugar or oil.
There’s more than enough incredible flavor in the hummus, lemon juice, and garlic, so adding extra sugar just isn’t necessary. Similarly, the creamy texture of the hummus means there’s no need to blend oil into the dressing to make it thicker and smoother. Instead, water is used to thin out the creamy Greek salad dressing which massively lowers the fat levels and calorie count.
One of the reasons salad dressings are sometimes thought of as unhealthy is because people over-use them. The primary ingredient in many dressings is oil and if you drench your salad in tablespoons and tablespoons of the stuff, you could end up consuming more calories than you would if you ate a cheeseburger.
As long as you stick to a sensible drizzle serving, like you can see in the pictures, this hummus salad dressing is truly good for you.
How long does homemade Greek dressing last?
This creamy vegan Greek salad dressing will easily last for up to 1 week. To keep it at its best, I recommend you store it inside an air-tight jar and keep it chilled in the refrigerator. I use these cute little mason jars for all my homemade salad dressings. They’re the perfect size to store this amount of dressing without filling up your refrigerator.
Although this easy Mediterranean salad dressing will keep for one week, good luck getting it to last that long. This stuff is so deliciously moreish that you’ll want to put it on everything. It’s especially good drizzled over garlic seared scallops with pesto zoodles. Try it!
How to make a super simple Greek salad
I love making salads because they’re just so quick and easy. To make a simple Greek salad, all you need to do is round up your ingredients, chop them however you prefer, drop them into a bowl and drizzle over this healthy Mediterranean salad dressing. You’ll need:
- Mixed greens
- Cooked chicken breast
- Black olives
- Red onion
- Feta cheese
- Creamy Greek salad dressing
If there are any ingredients listed above that you don’t like, simply substitute them for something else or ditch them entirely. Don’t like spinach? Switch it for butter lettuce. Not a fan of chicken? Swap it for tuna. You get the idea.
One of the best things about salads is how versatile they are. So feel free to get creative and use your favorite salad ingredients.
