These Vegan Blended Baked Oats are just like eating healthy oatmeal cake for breakfast. Requiring just 8 simple ingredients, the flavor possibilities are endless!

I am so glad this blended baked oats went viral on Tik Tok becuase my life has been changed for the better since making them. Specifically my breakfast game has been changed for the better.

If you have a sweet tooth like me, this recipe can also double as a healthy dessert!This recipe makes a single serving, but you can easily double it or feed a family when you scale up the recipe!

Ingredients you need for classic vegan blended baked oats:

Banana

The riper the better!

Oats

You can sub oat flour if you don’t have a blender. I use quick oats!

Almond milk

You can use any dairy-free milk for these vegan oats. Feel free to swap out almond milk for oat milk, soy milk, or any other plant based milk.

Chia seeds

If you don’t have chia seeds, try swapping in ground flaxseed or hemp seeds! If you omit chia seeds, you will want to reduce the liquid by about 1 tbsp.

Liquid stevia or sweetener of choice

I prefer to use a touch of liquid stevia to sweeten my baked oats, but you can definitely use maple syrup to keep this recipe vegan! Liquid stevia is MUCH sweetener than maple syrup, though, so you will want to add about 2 tbsp in place of the stevia.

Vanilla extract

My classic blended oats recipe uses vanilla extract, but one of these tik tok baked oats flavors will require almond extract. The sugar cookie variation to be specific!

Baking powder

This makes them rise nice and fluffy to replicate that cake texture we love! You cannot leave this ingredient out.

Pinch of salt

You can omit the salt if you are watching your sodium intake but I love salt and even sprinkle extra sea salt on top.

What kitchen gadgets do I need to make vegan baked oats?

You don’t need many kitchen gadgets to make vegan baked oats! Just a few utenils are required:

Measuring cups and spoons

You will need a 1/2 teaspoon, 1/2 cup, and 1 tbsp measuring utensils

Blender

You can skip this if you use oat flour, but I prefer using my Nutri Ninja to blend my baked oats

Small ramekin

These are my favorite small ramekins to bake them in! You can also bake them in a muffin tin if you prefer or if you don’t have a small ramekin. It will make about 3 muffin cups.

Flavor variations to try:

I have made a bunch of fun flavors using my classic vegan blended baked oats recipe. You can make any of the versions listed below with just a few additions or swaps!

Vegan Sugar Cookie Blended Baked Oats

To make sugar cookie baked oats, use almond extract instead of vanilla extract. Top with vanilla greek yogurt for the “icing” and your favorite vegan sprinkles.

Vegan Snickerdoodle Cookie Baked Oats

To make vegan snickerdoodle baked oats, follow the classic baked oats recipe and add 1/4 tsp cinnamon to the batter. Top with coconut sugar and cinnamon before baking.

Vegan Cinnamon Roll Baked Oats

To make vegan cinnamon roll baked oats, follow the classic baked oats recipe and add 1/4 tsp cinnamon to the batter. Top with coconut sugar and cinnamon before baking. Once your oats are done baking, allow them to cool for about 5 minutes. Mix together 1 tbsp cream cheese and 2 tbsp greek yogurt. Add to a ziploc bag and cut the corner off. Pipe the cream cheese “icing” on your baked oats. Optional: pipe in a swirl to make it look like a cinnamon roll!

Vegan Cookie Dough Baked Oats

To make vegan cookie dough baked oats, follow the classic blended baked oats recipe. Fold in 1 tbsp mini chocolate chips. Top with more chocolate chips and bake. Sprinkle with sea salt once oats come out of the oven.

Tips to make the best blended baked oats:

  • Do not overbake your oats! They will come out dry and that is not what we want!
  • Use a strong blender or super fine oat flour. I prefer a cake-like texture, which means I don’t want to be able to spot any oats. You can’t over mix the batter either, so blend away until smooth!
  • To make oats in a larger pan, increase your baking time. For an 8×8 baking pan, you will want to bake 30-35 minutes. An 8×8 pan will serve around 4 people. Baking time will vary based on your oven, so be sure to frequently check on your baked oatmeal.

How to store baked oats:

  • Blended oats are best when enjoyed straight out of the oven, but you can certainly meal prep them ahead of time and store them in your refrigerator for up to 3 days for best results.
  • Keep your oats plain and add toppings (like yogurt or berries), the day you are going to eat them. Adding the toppings before storing your oats can change the texture and integrity of your baked oats.
  • You can freeze baked oats for up to 3 months and reheat them in the microwave.

  • 1/2 Cup Oats Quick cooking or rolled oats, not steel cut
  • 1/2 Banana Ripe
  • 1 tsp Chia Seeds See blog post or notes below for swaps and tips

  • 1/2 Cup Unsweetened Almond Milk See blog post or notes below for swaps and tips
  • 1/2 tsp Vanilla extract Swap for almond extract when making Sugar Cookie Baked Oats flavor
  • 1/8 Tsp Liquid Stevia See blog post or notes below for swaps and tips
  • Pinch Salt

Instructions
 

Classic Vegan Blended Baked Oats

  • Preheat oven to 375F. Add your oats to a blender and blend on high.
  • Once oats are a flour consistency, add the remaining ingredients.
  • Pour mixture into a greased 6-8oz ramekin and bake for 15-17 minutes.
  • Allow to cool for a few minutes before digging in. Enjoy!

Vegan Cookie Dough Baked Oats

  • Follow the classic blended baked oats recipe. Fold in 1 tbsp mini chocolate chips. Top with more chocolate chips and bake. Sprinkle with sea salt once oats come out of the oven.
