A few weeks ago, I shared my Classic Red Curry Sauce recipe on the blog, but today is all about my super easy 15 Minute Peanut Butter Curry Sauce.
It shouldn’t come as a shock to you that I had to put a peanut butter spin on my curry recipe since peanut butter is my all-time favorite food!

I love making curry for many reasons:
It’s quick, easy, cozy, healthy, filling, and it can easily be adapted to your liking!
You can adjust the spice level, swap out your protein, change the consistency of the sauce, and so much more! I love it when a recipe can be easily altered depending on my mood.
I don’t know about you, but I love a thick curry sauce.
How do you make curry sauce thicker?
There are a few ways to thicken up your peanut butter curry (or any curry recipe for that matter!).
- One way is to simply simmer your sauce on low heat (uncovered) until the sauce reduces. Turn your stove burner to medium-high, remove the cover from the saucepan and let the liquid simmer just below boiling point for about 5 minutes without stirring. Watch the sauce closely and, if necessary, adjust the heat to ensure the sauce does not boil.If you are cooking vegetables, try reducing the sauce first and then adding the vegetables. This will help you to avoid overcooking the vegetables maintaining valuable nutrients for the whole family.
- Another way to thicken your curry is by stirring in a tablespoon of arrowroot per 1 cup of liquid in your sauce.
I prefer the first method.
Or adding more peanut butter to thicken it up because you really can’t ever have too much peanut butter, right? 😉
If you’re new to making curry, you might be wondering: “What is the difference between Thai curries?”
Traditionally, all Thai curries were made with the same ingredients except for one thing: the chilies.
Red curry was made with several red chilies for a fiery hot dish, while green curry was made with green chilies, and yellow curry was made with yellow chilies.
For this peanut butter curry recipe, you will need red curry paste.
What is red curry paste made of?
The main ingredients include (dried) red chili peppers, garlic, shallots, galangal, shrimp paste, salt, kaffir lime leaves, coriander root, coriander seeds, cumin seeds, peppercorns, and lemongrass.
I used a store-bought red curry paste for this recipe, but feel free to make your own if you’re feeling ambitious!
Keep in mind that will make this peanut butter curry recipe take a little longer than 15 minutes, though. 🙂
For this easy 15 Minute Peanut Butter Curry recipe you will need:
- Coconut milk
- Creamy Peanut Butter
- Red Curry Paste
- Soy Sauce (or coconut aminos if you’re gluten-free)
I prepared mine with some shrimp, onions, and bell peppers. Add whatever protein and sides you prefer!
